Thankyou all for the quick replies. think i will cook it for 5 mins as the stalks are massive and very thick so that should give them a head start.

However, the pinch or bicarb and sugar to taste or just sugar to taste. It does take a lot of sugar to sweeten rhubarb, especially after the first delicate pink stuff. It is worth it, it is rich in vitamin C and fibre.

My exOH used to like it raw with a wee poke of sugar to dip it into (like a super sour sherbet dip)
Also, mix up a batch of plain muffin mix, put half a muffin's worth of mix in each case, add a teaspoon of rhubarb cooked down in sugar/water, add the other half muffin's worth of mix, sprinkle with brown sugar and bake 15 - 20 mins.
