Hard drive to USB wire

Recently posted about doing away with my old desktop and replacing it with a print server.
The only other function the machine serves is as a place to back up old files. Can I take out one or both of the old hard drives and get a hard drive - USB connector gadget and use this like an external drive or should that sort of thing only be used as a stopgap?
I don't store masses of data so it seems to spend another £60 on an external drive in order to save a few quid a year in electricity. On the other hand I don't want to be using a vulnerable piece of equipment as my back-up.

    If there isn't a large amount of data to back up why not get a decent size thumb drive? Much more convenient to carry around, and doesn't cost £60. More like £35 for 32Gb
