OH bought me a carob Easter egg by mistake once, and I can tell you it is no substitute for chocolate. There is no substitute for chocolate;) Luckily it is optional in that recipe.
I've used carob in baking/cooking & it's ok because it's mixed in with other ingredients, but carob bars etc, where its obvious, are horrible (imho ;))

Thank you so much for these recipes. My baby granddaughter is allergic to egg and tho I have found a quite nice egg-free recipe we're all a bit bored with it. There are lots of vegan recipes with banana instead of egg (we don't like banana in cakes a lot) or tofu, but these recipes sound much nicer. THANKYOU ALL !

Though I've just spotted: AudreyHepburn's link is to a recipe that says 'nearly fat-free fruit cake' but the ingredients have absolutely NO fat in, Have you tried it Audrey ? I wondered if you had, and if it didn't need a tiny bit of fat to hold it all together ?

Thriftlady you're amazing, I dono how you do all this ! I am looking for ANY kind of diabetic cake or biscuits, just anything for a nibble with a cup of tea... any ideas what to look under ? I just get pages & pages about diabetes !
  • There is a thread here, where I asked a similar question. There are also some recipes, including one we worked out from the baker herself. (post #13).

    Hope that helps,

    Regards,
