On our way to our summer holiday, we stopped off at Waddesden Manor. We treated ourselves to afternnon tea, and one of the items on the menu was Amazing Cake. It looked like a fruit cake and claimed to be egg, sugar and fat free 
Anyone have any idea what sort of recipe could produce such a cake? Needless to say, I had scones and cream

could it be this one? it's a Rose Elliot recipe
Amazing Eggless Fatless Sugarless Fruit Cake.
Makes one 2lb. loaf size cake.
8oz. cooking dates.
10. fl. oz. water (275ml I believe).
1 lb. mixed dried fruit.
6oz. plain wholewheat flour.
1 Tablespoon carob powder (optional).
3 tspns. baking powder (soda).
1 tspn mixed spice.
The grated rind of one orange or one lemon.
1oz. ground almonds.
4 Tablespooons orange juice.
flaked almonds for the topping.
Set oven to 160 deg. C (325F, Gas mark 3). Grease a 2lb. loaf tin and
line it with greaseproof paper. Put dates and water into a saucepan
and heat gently till dates are soft, then remove from heat and mash to
break up the dates. Add all the other ingredients (except the flaked
almonds for the topping, of course). Spoon into the loaf tin, and
level off the top. Sprinkle with the flaked almonds, and bake for 1hr
30mins, till a skewer comes out clean. Let it stand for 5 minutes at
room temperature before turning it out to cool on a wire rack.
EDIT ... it just dawned on me, you probably won't be able to tell unless you make the cake/s (you're bound to get lots of recipes posted) ... is a marathon baking session looming?0 -
Sounds impossible to me Penny.
I've seen a few wartime recipes for sugarless cakes that use a tin of condensed milk or jam -so not really sugar free.
I've seen plenty of fat-free sponges and as you know I've made egg-free cakes, but no sugar, fat or eggs?
Ooh! I've had a thought -you can replace fat and sugar with apple sauce or prune puree. I think you can buy a commercial version of the prune puree. Maybe that was the cake's secret? It would be a pretty dense and moist cake;)

It is a bit of a cheat, though, as there will be plenty of sugar in the dried fruitDon't know if it will be acceptable for my friends with diabetes?

i thought weetabix cake sound horriable but its lovely but have tried some horriable low fat recipes0 -

That was why I used the caveat "some sort" of substituteRest assured, I was wrinking my nose as I wrote it :rotfl: There is no substitute for chocolate - when I'm fed up with my latin, that may be a good sig :T

EDIT ... I added diabetic to the parameters & THIS is the result, you might find something suitable there0
