How do you set yourself as away on eBay?

You don't - you just make it known in your listings.

I'm sure there used to be a way to put a little orange bar at the top of your listing that said - the seller is away from xxx to xxx or has that been taken off?

I've never seen this. Just edit your listings.

You can only do that if you have a shop

Only gripe is now with putting them in, all the listing that have offers, i think the update will only appear right at the bottom.
