Ox Tail Bargain

Hi I was in Sainsbobs last night and there was reduced four medium sized pieces of oxtail tied together.I got them for 53p weighed about 450g. Now I have stuck them in the freezer as I'm away on holiday this Friday so I will cook them when I come back. Now what I would like to know is
a. shall I just bing in the slow-cooker with veggies and a few oxo cubes and make a soup/casserole thingy or
b.can anyone think of what else I could do with my bargain.
I must admit I do like ox-tail soup but have never made it as yet.I just want a reciepe for my 53p bargain ,or shall I just cook it for my DD's dog ? Any ideas would be welcome
Cheers JackieO x

That's what I'd do Jackie except I'd use wine or beer instead of stock cubes. I don't think there's anything else you can do except cook it slowly (I'd do it an the oven but, you know me and slow cookers:D).

Last time I cooked oxtail I added carrots, swede, parsnips and barley plus stout and a bay leaf or two. It was gorgeous.

My Mum used to do oxtail stew in a pressure cooker. Oh, I can taste it again now!

Another vote for doing it slowly and simply, and definitely for using beer instead of water. If cash is really tight, a can of supermarket budget stuff will supply the necessary alcohol, but they usually also do individual bottles of better beers. ASDA have bottles of Manns brown ale for 88p each, which would be perfect for this.

The alcohol will tenderise the meat, which will literally fall off the bones, all the goodness from the bones will have gone into it as well ...

    Sorry, DD's dog.

  • I always think anything with ox tail tastes better the next day.

I cook mine long slow, then put in the fridge over night.

The excess fat can easily be removed, then thoroughly heat through.

    Regards

Hi there - this is a recipe I use and it makes loads. My OH isn't keen on meat on the bone but he likes the taste of this so suffers it! We also throw in any other veg we might have lying around.

    Oxtail Casserole/Stew

1 oxtail about 2-2.5 lb. Cut up into peices
    2 tblsp. cooking oil
    Salt and Black pepper
4 rashers bacon or bacon pieces (I never weigh so just throw some in!)
    2 medium onions sliced
    1 clove garlic crushed
    4 carrots sliced
    1 tin chopped tomatoes
1 pint hot water with two beef stock cubes crumbled in
2 stalks spring onions finely sliced
    1 sprig thyme
    splash of worcestershire sauce

splash of red wine if you like
pinch of chilli powder if you like a little background heat (optional)
    • Trim away excess fat and brown oxtail on both sides removing when brown.
    • Pour off excess fat.
    • Dice bacon and fry for a few minutes.
    • Return oxtail to pot with bacon, add carrots, onion, garlic, tomatoes and hot water.
    • Cover and simmer gently for 3 1/2 to 4 hours or until meat is almost tender.
    • At this stage add more liquid if necessary and season.
    • Cover and simmer for 20 to 30 minutes.
    Serves 4.

And I quite agree, it always tastes even better the next day.
