Chutneys...

I have seen loads of people going on about making marrow chutney can anyone point me in the right direction for some recepies?? Also some for onion, tomato and beetroot chutneys would be nice.

Another question would be how long will a chutney keep for. I found a few recepies in my cook books and most of them said 1 month in the fridge when Ideally I was looking for something to last 6+ months unopened.

    1 month in the fridge??? Stuff and nonsense! What's the point in that? Chutney is a preserve which by definition means you can keep it for along time without the need for a fridge.

    I make damson chutney and my last batch was made in September 2007. We are still eating it;) All traditional chutney recipes will keep at least 1 year. They need maturing for about 3 months before eating. If you're making chutney now it'll be ready to eat alongside your cold turkey and ham on Boxing Day:)

    I love making chutney, it is easier than jams and jellies because all you do is chop everything up and cook it slowly in a big pan. There's a fair amount of work particularly if you are stoning 4lbs of damsons, but the results are so worth it.

    I think a good basic chutney recipe which allows you to make use of whatever fruit/veg you have a glut of is The River Cottage Glutney recipe. Enjoy;)

    Chutney lasts forever (well it seems like it at least). We are currently still eating the apple chutney I made last October and it is lovely, chutney needs time to mature otherwise it tastes of vinegar. This is the tomato chutney recipe I will be using this year: http://www.bbcgoodfood.com/recipes/2644/autumn-tomato-chutney have never made marrow, onion or beetroot sorry.

    I have got a massive pan of marrow chutney on as I type.

    I am using the Glutney recipe posted above and it's made loads of it so it had better be nice! :D

    It does look and smell nice. I'm just waiting for it to thicken.

    well I have a batch of the river cottage glutney one on at the moment. smells yummy already I need to resist the urge toeat and let it mature once jarred up.
