Hi,
We are looking at having a single storey extension at the rear of the house and will involve taking loadbearing walls out and putting some steel work in etc. Would a Architectural Technician do drawing for this and is the steel work something that he would do, ie work out what is required etc.

The architectural technician will do your drawings.
You will need a structural engineer to do the calcualtions for your RSJ based on the openings that have been designed - that is their speciality.
The two are different.Everything that is supposed to be in heaven is already here on earth.
