I make homemade healthly low fat chips in the following way: -

    1. Peel (or leave unpeeled for jacket wedges) pototoes
    2. Chip the potatoes
    3. Par boil chips in a pan of boiling water until the potatoes soften a bit, drain and set aside
    4. Spray a baking tray with oil (I use Frylight)
    5. Place the chips on the baking tray and spray with the oil
    6. If you wish add a little salt, herbs or spices
    7. Bake in the oven until slightly browned (I use the highest oven setting)

The chips turn out really lovely and I particularly love the wedges made in this way.....Also if you follow the slimming world diet, these are free on a green day!

I use this same method but with no oil at all, the same with roasts, and my DD10 loves them.

My only concern about frying chips twice with the first fry done on a lower heat, is the chips will soak up more oil.

I normally wash the chips in very cold water then dry and deep fry in hot oil once.

I have considered using rapeseed oil in the past mainly to support British farmers who started to grow this crop if it is an healthy and cheaper option than olive oil even better.

The oven method for cooking chips and wedges also sounds very tempting and a good healthy option.

I make the healthy home made oven chips too but cut out the boiling and just put on baking sheet with a drizzle of olive oil and make sure with your hands that each chip has a coating and bake - wonderful and all my friends now do them this way - about 180 degrees for oh I think 30 minutes max! ! I never time them
Saving in my terramundi pot £2, £1 and 50p just for me! :j

    We had them tonight too.
One thing that really helps if you deep fry in oil,is only use it for chips and nothing else.Once you have fried another thing in it,batter, scotch eggs etc,it wont make half such nice chips.Even chip shops fry the chips seperately.

How many times should the oil be used for cooking chips before using new?

At the moment I just keep topping the oil up as the level in my chip pan gets lower.

I only use the oil to cook chips.

After Hydrogenated oil Rapeseed oil is the most suspect.

It is grown by farmers because is well subsidized and has no problems with insects. In its natural form it is toxic to insects, humans and other animals.

Its name was changed in America to Canola Oil to try and improve its image.

I used to be indecisive but now I am not sure.

Your information is frightening and contradicts what I read in Rick Gallop's GI book where he says "The 'best' fats are monounsaturated fats and they are found in foods like olives, peanuts, almonds and olive and rapeseed oils. Monounsaturated fats actually have a beneficial effect on cholesteral and are good for your heart."

You think you are eating healthily and then its scary to read that what you are eating can have serious effects on your health!

There has been a lot of scaremongering about rapeseed and canola oil - and there is much on the internet on both sides of the argument - here is another perspective:
