As for facing your phobia ... well done!
If you like the taste but not the texture you could try cooking them a little (as described earlier), or try again another day with a different apple. Different types of apple have different textures and flavours, and their ripeness also changes the texture/flavour.
For me, apples are OK chopped up (as long as they are sweet - can't stand a sharp apple), but I don't like biting into them. Very good in crumble or cake
I have a great recipe for apple & raisin cake which I cooked in a home ec class at school many years ago. Until recently, it was one of the few things I cooked.
Now I'm a 36 year old just learning how to cook meat ... my first roast chicken was an adventure in itself. So was the bolognese sauce, and the chilli con carne. Now I have some pork chops in the freezer I don't know what to do with.....!!!

littlepinkstars, you are being very brave, and I think ultimately this will improve your quality of life, so keep being brave.
The other thing is do you prefer sweet or svaoury tastes? Using fruit in a way you might be predisposed to like it might help. e.g. if you prefer savoury food apple and pork is a traditional pairing, or if you prefer sweet you could think about trying apple pie. Although fruit in is pure state is the ultimate!
although, re texture, I love apples, but I also really love apple sauce/puree, and often have this with yoghurt or oatmeal or even some cereals for breakfasts (instead of milk)0 -

You can grate apples too, to make even tinier bits. Remember if you grate/chop the whole apple but dont eat it all at once it will go brown and not taste so nice, so maybe jsut prepare a little at a time.
I also second what others have said about trying it several times - when I left home I didn't like ANY vegetables, but I bought and cooked them anyway and after a while i got used to them and they're now my favourite foods.
Of course it may just be that you don't like apples, so have a nibble of a variety of different things too see what suits your taste. I am not picky as a rule but I certainly wouldn't eat mushrooms - argh!
