I passed this recipe to sylphraven a few weeks ago and she has asked if it can be shared on here. So here goes:
Shropshire mince pies are actually from when I was a schoolgirl, bit of a coming together of ideas I suppose. Called Shropshire mince pies because, you guessed it, I was brought up in Shropshire (but moved away many year ago).
Anyway, here goes:
orange butter pastry:
1lb of plain four
10 - 12 oz butter
3 - 4 oz of trex (or something similar)
The amount depend upon how 'short' you like your pastry.
A large orange, rind finely grated, and then juice it but keep separate.
Mincemeat.
Cream cheese - Philadelphia, don't use the low fat version. 1 regular size package
1 - 2oz caster sugar - depending how sweet toothed you are.
Milk to glaze- Make the pastry, adding the orange rind to the flour etc.
- Use the orange juice to bind, adding as little more cold water if required. But the mix will be really heavy so beware, you really don't need much liquid.
- Bring all the ingredients together and then wrap in clingfilm and put in the 'fridge for at least an hour.
- Roll out the pastry (a little thicker than usual) and line your patti tins.
- In a bowl, beat the cream cheese and caster sugar until light.
- Add a teaspoon(ish) of mincemeat to each pie, the about the same of the cream cheese mixture.
- Put a lid of pastry of top of each pie. The lids won't sit that well, but that's ok.
- Brush with milk. Make a slit in the top of each pie.
- Bake at Gas 6 for 15 mins or so, just keep an eye on them (I do a lot by 'eye'). To be honest I don't thnk they smell at their best when being baked, but don't worry, they're fab.
- Remove from oven, cool slightly. Dust with icing sugar.
- Pour a lovely cup of tea and enjoy some mince pies (best when warm).

Hels - it was but seriously you should have seen it by the end of the day!!! We left at 6pm and things were falling out the top is was soooo full!!! Personally I blame Mrs Tidge's Paint tins!!! :rotfl::rotfl::rotfl::rotfl:

Ladies the challenge cards you have made are just so amazing! I have downloaded the template so I can do some of my own. Not sure what style to go for as I laughed out loud with OAP's damart style thermals and loved the blinged up thong from princesswoo!
I am still recovering from the NEC and I have had a bad headache all day! I think I prob got a bit dehydrated yesterday. I haven't even looked at any of my pics yet but will upload them eventually! I looked through my stash today (when hubby was out like Popkins/Popster/Pipkins he might be a bit shocked by the amount!) and I added up the amount I spent and I was shocked!!lol
Snoopy58 those mince pies were delish and I don't like mince pies so I am very tempted to give them a go this year.

I had a really fab day yesterday:j:j:j it was lovely to meet some of the people off here and to be able to put faces to the names. it is shame there were a few who couldn't make it as I would have loved to meet you all. still hopefully you will be able to make it in March. I am def going again!!
rusty thank you so much for driving me to the NEC and back - it was much appreciated. I think you must have flown back from mine though as I am sure it only took you about 35 minutes:D normally it takes 45-60:eek:. thanks too for the little bag of goodies and all the sashes, balloons, veil etc. thanks also for yours and JHB's negociating skills - I have used my nesties they are fab!

popkins it was lovely meeting you and hopefully if we meet up again in March we will have more time to talk. I loved your trolley - I said to OH that's what I will get for March. so much easier than carrying bags. Although i had all my stuff in a rucksack on my back. It was easy to carry but I think I prob knocked a few people out with it!!
JHB it was lovely meeting you too. as I said above thanks for your negociating skills and 'paying' for all the items. I hope you took some of the cash home with you:D

Hi Ladies , So glad to hear you all had a fab day and found lots of great bargains.
Been out all day today my little grandson Kobie Lexus had his first birthday yesterday and we all went out today with him then everyone came to my house and they have only just left.
Fab underwear cards ladies . wonder what kaitlyn will make of the thong tomorrow lol.
