The thing that puts me off making the mac cheese is i would only ever have cheddar in. Do you think that would not be as nice or too rich? Any ideas?
I made the macaroni cheese last night & did it with cheddar and the artichokes & bacon , it was excellent & the artichokes did seem to add something special to the taste. When I do it again though I'll try it without the artichokes just for economy's sake & see if the lack of them is very noticeable( we already had some special offer atrichokes in the cupboard this time ) but I will definitely keep the tomatoes on the top, they made a nice fresh contrast with the cheese sauce & cut through the richness.

What is the majority? (serious question, i don't know any statistics or hard facts)

Well I am talking about majority in as what I see around me, from up North so the majority are like me, the North South divide is more apparent than ever before and that i believe is a fact. Like i said everyone to their own opinion on this series

It makes you think how much the middle/upper classes waste whilst those of us on tight budgets have always had to think outside the box.

Isn't that a bit of a generalisation? I don't like thinking in 'classes' but if I was forced to place myself somewhere it would probably be 'middle class'. Despite that I certainly know how to make the best of my food budget and am well known for not wasting food. One of ds' friends happened to be here for tea last night and said after tea ''does nothing in this house ever get wasted?'' :D

After some people kindly suggested that I apply to appear in Martin's programme I surprised myself by seriously considering it as I thought it might help others who are new to the Old Style way of thinking....having read through this thread today and seen how the families on this programme have been pulled to pieces, I've come to my senses and decided I'm definitely not up for that kind of slating.

I've been away for a few weeks so only managed to catch last nights programme. I must say that I enjoyed it. I did think the tips and recipes on using salmon were good and I'd like to try some of them, however I feel that eating salmon all week would be enough to put anyone off it. I understand why they did it but surely they could have mentioned that in real life some of it could be frozen to use another time.

No the programme is not full of economy.....there have been plenty of other programmes that have gone down that line successfully, but in my opinion there were quite a few good OS tips included, even though there could have been more. It's a different slant on reducing grocery budget costs for those who overspend and clearly for television purposes they have taken extreme examples of families probably to get us talking...which it has. Either way I enjoyed it and would like to try some of the recipes myself.

I'm looking forward to next week and the students and will ask dd if she's interested in watching it with me as she's moving out of halls and into her first house this year. You never know we might both learn something. :D

anything that uses wine though, what can be used in its place?
we dont drink wine as i am not allowed to due to meds, dont drink it anyway so how can we replace it??!!

Stock & cornflour and a bit of extra flavouring and a bit of imagination? splash of red wine vinegar (not specifically, i forget what recipe we are discussing , but Im sure there could be some substitute. Soy sauce, extra herbs, chilli flakes.... loads to make up for that wine !

My sausage casserole recipe asks for half cider and half stock - can just use all stock or all cider and thicken/add extra liquid depending on the consistency )

I wasn't being confrontational, Iw as asking a genine question. It just makes me wonder when people keep banging on about the norm - what actual hard facts are there to show who is minority and who is majority income wise/food spend wise? Again, I am genuinely interested. :D To me facts make more sense when they are backed up by evidence - again, that reads as I'm having a go at you but I'm more referencing the tone of some other posters on the thread. Not you m'lady.

If it's the alcohol that isn't allowed because of your meds, remember that the alcohol cooks off if you're adding it while you're cooking.

i was thinking along the lines of the poached salmon that was the starter for the tumble down on last nights show.

but to others i just also dont like wine, so dont miss it not being allowed alcohol, i just find it annoying that sooooo many reciepes ask for wine and dont say an alternative.
Maybe Martin could cover this in this programme that i have only just red on here about! what is that about? not heard anything about it!!!

We should all also bear in mind that editing can dramatically change how something comes across - it might well have been the case that he added "cheese stays good for ages, of course, or you can freeze it, but since you've got so much we'll add some of it into this dish", but that only the first few words avoided the cutting-room floor.

yes, he may well have done, as you say its difficult to get a true picture when its been edited for its time slot; its a shame that the way it came over is misleading that's all ;)
... don't throw the string away. You always need string! :D
