    Roasted veg (peppers/thin sliced carrots/toms/onions etc) with a little mozarella, ratatouille (sp?), chilli, sweet and sour veg or curry all go on my baked spuds! Even a spoonful of pesto instead of butter is lush! Basically if I'm batch cooking something I'd have with couscous/rice/pasta/noodles I freeze half sized portions (or that random spoonful or 2 that won't fit into a normal portion box) too for spud toppings!

    As i have 4 cooked jackets that I cooked yesturday but did'nt want to through away instead i will through them in the freezer and will take to work some days
    you know I learn something new ever day on this site and it is all making me more OS :j

    Hi,

    If we have Jacket Potatoes on a Saturday, I batch cook extra & will eat them up to the Wednesday. May be longer than others, but they are stored in the fridge & I've always been fine afterwards.

    Here's what I do,

    Several Jacket Potatoes cooked in the oven (Def agree with you there)

    Scoop out flesh, mash with butter, cheese and cooked chopped bacon and egg yolk, bit of cream if you are feeling decadent. Take the egg white and whip it until peaks form then fold into potato filling. Spoon back into potato and sprinkle with grated cheese.

    I would then return them to the oven to warm through and brown on the top. Now if I was making them in advance I would freeze them before this point but I have indeed cooked them and then frozen the left overs and then just warmed them through in the microwave. You would probably want to do the second part of the cooking as the microwave won't brown them for you unless it has a grill element.
