bramble alcohol

Hi I quite fancy picking some brambles this year and turning them into a nice alcoholic beverage. Has anyone got any recommendations and recipes? Many thanks:rotfl:

    Balckberry wine, mmm, made it years ago, one of the better ones IMO

  • Not that I drink (so I'm not probably the best person to answer you) , but I would suggest, unless you're confident with brewing and distilling and all that stuff, just bung the fruits into a load of halfway sensible vodka and leave to macerate (I think that's the word). Or turn into a sweet, sticky syrup and use that as a mixer. Gives you more choice.

    one third berries to one third sugar to one third gin/vodka/brandy will work. All in a bottle and shake daily until sugar is gone. Then this is the hard part....leave until Xmas!

    I'd not risk natural yeasts as the time they take to start up can lead to infection. I'd use some all purpose yeast for a dry wine, bread yeast for a low alcohol (6%) sweeter wine or if Brettano Myceas is really your thing then I'd suggest looking at wyeast lab who produce some "lambic" yeast strains.
