Looking for some general holiday advice

Hi!
This is my first post so please be gentle!
I'm looking for a holiday for me and my girlfriend - we're flexible on dates; anytime between 28th of May to 8th of July and want to go for 14 days.
I'm really open to suggestions of any kind - maybe something a little different. I looked at Egypt but apparently its too hot at this time of year.
We don't really want to spend too much - probably £500 each (so £1000 in total) all inclusive or less if not all inclusive. I'd also like to know what kind of costs of places are. In other words which are cheap or expensive to buy things, eat out, etc.
Sorry, I know its really open ended but I really don't know where to start!
Any advice is appreciated.
