long hours and reduced pay

I have just had my wage review, they gave me a 1.5% increase, wow!
As I have been doing chef duties outside on my contract as a manager, they have now taken this away and I am now £2000 pa worse off. They still want me to do these duties. When I questioned that I am doing 70/80 hours a week, with no 11 hour break between days, they simple said, the business has to run with these hours. 7 days a week, yes I could get cover, but I cannot get staff in as the budget would not allow this. At 63 years of age, it would be hard to find another job, but could I go for constructive dismissal?
