What to do with skate wings - help?!

    There's an earlier thread on what to do with skate wings that should help so I've added your thread to it to keep the replies together.

  • My mum only cooked about 3 different meals, but skate was one of them & I do it the way she did.
    Fry gently in a little butter, just before serving pour in a tablespoon of vinegar, stand well back as it spits like mad, mum called it skate in black butter.

    I adore skate wings - they are my fave fish.

    In the oven, rub with oil, sprinkle with salt and pepper. A few peppercorns on them is good.

    de-glazing the pan with a drop of white wine is nice - though not essential.

    They are very popular in France and when we were last there on holiday we had them about five times - good job OH likes them! :D

    [FONT=Verdana, sans-serif]COTSWOLD GRILLED SKATE Preparation: 10 minutes Cooking: 15 minutes Serves 1 340 calories
    80z/240g skate wing

    [FONT=Verdana, sans-serif]juice of 1 lime or lemon[/FONT]
    [FONT=Verdana, sans-serif]salt and ground pepper
    ½ oz/15g fresh breadcrumbs
    [/FONT]

    [FONT=Verdana, sans-serif]1 medium tomato, sliced [/FONT]
    [FONT=Verdana, sans-serif]1 teaspoon olive oil
    1/2 oz/15g Double Gloucester
    [/FONT]

    [FONT=Verdana, sans-serif]grated lime or lemon slices and parsley sprigs, to garnish

    1 Preheat a medium-hot grill.
    2 Rinse the skate wing and pat dry with kitchen paper. Place on' the grill rack.
    3 Mix together the lime or lemon juice and olive 00 and brush over the fish. Season with salt and black pepper and cook for about 6 minutes on each side basting frequently with the lemon juice mixture.
    4 Sprinkle the breadcrumbs and grated cheese on top of the fish and grill until melted and golden. Transfer to a warm plate and serve with tomato l slices. Garnish with lime or lemon slices and parsley_

    I'm trying to be more adventurous with the meat cuts and fish I'm buying (especially if it's cheap!) and I found some Skate wings reduced in Morrisons yesterday to 39p each! They look similar to the thin trout fillets that we've floured and pan-fried before, but I wonder if I do them the same? Can't use oil as such as I'm doing Slimming World, but baking and grilling are also options given on the pack :confused:

    Any ideas?

    I haven't cooked them myself but my parents have. They baked them in the oven in a foil parcel with herbs, lemon wedges & a dot of butter and said they were lovely. Also have a look at www.deliaonline.com she's bound to have them somewhere you'll probably just have to take the butter/cream out of the recipe LOL!

    We baked them in foil packets/baking paper with some veg and a bit of leftover wine but that is optional and this way works well as it steams thefish and you don;t need any oil. (be warned that they ave a slightly ammonia/y smell but they are supposed to smell like that - according to our fishmonger anyway....).

    my nan loves skate, and since i tried it for the first time last year i agree with her!

    she always fries hers, so i can't help you with the cooking aspect - the ideas above sounds lovely though :)

    when it's cooked, a tip to eat it is to pull the flesh off with your fork by running it down the 'bones' (which is actually bendy cartilege, not bone). then once you've eaten that side, flip it over and do the same. one side is thicker than the other.

    Oooh thanks! Never had Skate so really looking forward to it. Got both packs out of the freezer thinking there was one wing in each but no, there's two in each! 4 Skate wings for 78p!!! :j Just put the other pack back in the freezer as it was still frozen.

    I cook salmon in a foil parcel in the oven, so will try that thanks. The oven will be on anyway. I can pan fry, but it wouldn't be with olive oil, just FryLight. Hmmm, might get OH to decide when he gets home as I can't cook it until then anyway!

  • you can also cook it in milk, in the steamer, microwave it, we have a freezer full as my husbands a fisherman, i also use it in fish pies and fishcakes, its great for the kids aswell as there is no little bones.x
