Salmon

Options
We got got a whole side of fresh salmon today in tescos for £4.49. It's HUGH and we're not sure what to do with it? should we freeze? do i have to do anything in particular to freeze it? should i cut it up into portions or should i leave it whole?

any ideas what to do with fresh salmon?

    I love salmon, ive bought it reduced from the fresh fish counter before as well. I cut it (the person on the fish counter will do it for you if you ask) into individual portions, and then freeze it.

    Portion it, wrap indvidually in cling flim & freeze. Too cook, defrost thoroughly then grill with caujan spice on top or microwave in juice/rind of an orange & sever with lemon cous-cous. Super-fast, healthy & delicious:D

    I'd freeze it in portions unless you are planning a big party where you might want a whole salmon.

    You've named the fish? :D Sorry I couldnt resist. ;)

    Only freeze it whole if you will use it whole. We would never eat a whole salmon so I would cut it into portions and then freeze it.

    Definitely chop it into steaks and freeze individually like everyone else says.It's an absolute bargain.I bought one of those bags of individually wrapped salmon fillets this week for about £10 :eek: Thanks for reminding me to take advantage of whole salmon.

    I buy whole salmon and OH cuts into 2 portion steaks, which we freeze.

    Generally I do any of the following

    1. Sprinkle with lemon juice and pepper, wrap in foil and oven bake
    2. Top with a philly low fat cheese and whole grain mustard, oven bake
    3. place on foil, cover with a HM yoghurt and fish seasoning (Swchartz) and oven bake

    ... plus anything else I make up, depending on the ingredients I can find in the house at the time :D

    I love salmon fillets cooked like this...

    chop up some fresh ginger, chillis and garlic and add to some soy sauce. Put fillets in oven-proof dish and pour soy sauce over top. Cover with tin foil and cook in oven at about 200 degrees for 30 minutes. Lovely served straight from oven or left to go cold with salad for lunch next day. HTH

    I've been Money Tipped!
    Pin bone the salmon with some tweezers to be sure you get every last bone out. The link is to a recipe which I made a lot when we lived away and it is excellent, very good. Quite quick to prepare too and very tasty. I just used brown breadcrumbs, not the italian breadcrumbs. Still tasted good though.

    Advert on TV tonight said tesco whole salmon is 1/2 price (dunno the price per kg)

    Asda whole salmon is £2.98per kg (i.e. V. cheap) until 19/4/06. This is making it about £6.50-£7 for a whole salmon[i get at least 10 good sized portion out each salmon].

    I've been buying these. The fish counter will cut the head off, taill off and fins. You basically get 2 big pieces of salmon. Take it home and then chop it into the size portions you eat. Freeze the portions as individual portions in freezers bags. Defrost and then cook as normal.

    cheaper than meat at the minute!!
