Out of interest does anyone know how to get rid of the [Google Mail] folder? It is confusing for the person I'm trying to set up for to see a duplicate of some folders.
Only the ones under Google Mail are in use but not sure why the duplicates are necessary. Would be nice to get one of each folder and all inline.

Any advice gratefully received. The Google help files are about as useful as a chocolate teapot

You can't remove them.
I would recommend just using Gmail through a browser, install Google Chrome which will allow you to create application shortcut so the user they're accessing gmail through an application (infact it's through the chrome web browser)
Gmail through the browser (chrome/firefox) is very powerful, especially in the area of labels and contacts
also setup Google Calender for them0
