This sounds lovely greckofiend! My mum used to make what she called a boiled fruit cake, which involved tea and dried fruit, and it was always very moreish. Not sure about suitability for diabetics, sorry.

I'm not sure how sugar free this would be with 1lb dried fruit, glac! cherries etc.
I have been making a crust less quiche lately. Just onion and chive cottage cheese, beaten with eggs, cooked in a low oven until set, using silicone bakeware so it doesn't stick. Bit of grated cheddar mixed in is lovely too.Bossymoo
