    Ingredients
    1) 500ml Buttermilk (2 cups) (if you cant find buttermilk, you can use 490ml of milk with 10ml of lemon juice in)
    2)750ml "nutty wheat (3cups) (You can find nutty wheat in the breadflour aisle or use 2 cups of plain flour mixed with 1 cup of plain bran)
    3) 25ml Oil (2 tablespoons)
    4)25ml Sugar (replacer) or honey (2 tablespoons)
    5) 10ml baking soda (bicarb) (2teaspoons)
    6) 5ml Salt (1 teaspoon)
    7) 12.5ml sunflower seeds (1 tablespoon) Optional
    8) 1 Egg

    Method
    Mix ingredients together (dry ingredients first, then egg then buttermilk).
    If cooking a loaf in oven:180C for 20-25 minutes or until skewer inserted comes out clean, if in muffin tin:10-15minutes (180C)
    If cooking a loaf in microwave: 12-15 minutes at 70% power
    Muffins:4-5 minutes at 70% power.

    Baked Bean Cakes

    These scrumptious savoury cakes are ideal served with lots of vegetables or a crunchy salad.

    Serves: 4
    Syns per serving:
    ½ Syn on Green, 5½ on Original.
    Preparation time: 10 minutes
    Cooking time: 20 - 25 minutes

    340 g/12 oz potatoes, peeled and cut into small pieces
    1 x 198 g/7 oz can baked beans in tomato sauce
    2 level tablespoons very low fat natural cottage cheese
    2 tablespoons freshly chopped parsley
    2 egg yolks
    1 Spanish onion finely chopped
    Salt and freshly ground white pepper
    1 level tablespoon plain flour
    Fry Light, for spraying

    1. Boil the potatoes in a large pan of lightly salted water for about 15 minutes until tender. Drain well and mash them while they are still warm.
    2. Add the baked beans, cottage cheese, parsley and egg yolks. Mix well together and then add the onion and seasoning to taste. The mixture shouldn’t be too wet.
    3. Using your hands, mould the potato mixture into 8 patties, which are approximately 7.5 cm/3 in diameter, and dust very lightly with flour.
    4. Lightly spray a frying pan with a little Fry Light. Heat and then cook the patties for 3–4 minutes each side. Serve them immediately with some fresh green vegetables or a crisp salad.

    1 tbsp curry powder (I use mild but dont suppose it matters)
    1 tbsp fresh parsley (I used mixed dry herbs)
    1 tsp lemon juice
    Half a chopped onion
    60g basmati rice (For quickness i use a microwave pouch of rice, cook in the microwave and then add to the pan)
    100g tinned tuna

    Drain the tuna. Cook and drain the basmati rice and leave to cool.
    Brush a non stick pan with oil and saute the chopped onion with the curry powder.

    Add the rice, tuna and lemon juice and cook for 4 minutes. Stir in the parsley and serve with a lemon wedge to squeeze over.

    Yields: 2 Dozen


    Ingredients
    125 grams (4oz) Unsalted Butter, Chilled
    50 grams (2oz) Caster Sugar
    25 grams (1oz) Dried Cranberries
    125 grams (4oz) Plain Flour - Sifted - Plus extra to dust
    75 grams (3oz) Ground Rice


    Instructions
    1) whiz butter and sugar together, Add other ingredients until the mixture comes together. Turn out onto a floured work surface. shape into a rectangle (5x3x 3/4 inch) Wrap in cling film and chil for 30 mins (mixture may be a bit crumbly)

    2) preheat an oven to 200 C ( 180 for fan) Gas mark Six.
    Cut the dough into 3mm slices ( or whatever size you like im never very percise unless its for an order) and bake for 8-10 mins

    I add quite a bit of cinnimon just to give it some more flavour add as much as you like or another spice.
    Nutritional info - per Biscuit - 79 Calories, 4g Fat ( of which 3g saturates) 10g carbohydrate, 1g salt.

    Crikey, is this correct 2.5 syns for the whole cake, isn't a misuse of free foods then?

    Vegetarian Scotch Eggs. (syn free on Green plan)

    4 eggs
    1 pack Smash – Buttery or Original flavour
    Couscous


    Hard boil eggs and let them go cold.
    Make Smash up as normal, and leave to go cold.
    Shell the eggs, and cover with the Smash then roll in couscous.
    Bake in a hot oven gas 8 until golden.

    Serve with salad or sin free chips/wedges and baked beans.
    Good to take on a picnic.



    Syn free scotch eggs (Original plan)


    M&S ‘Count on Us’ Sausages (remove meat from skins)
    Hard boiled eggs
    Scan Bran
    Shape the sausage meat around the eggs, making sure the egg is covered. Crush the scan bran with a rolling pin (do this inside a plastic bag). Roll the covered egg in the crumbs until evenly coated. Bake in pre-heated oven at 180C for about 25 mins.
    Use the scan bran as part of a healthy extra b choice for a super free snack, or count 1 syn per 2 crisp-bread used.

    Syn free sausage roll (Original or EE)

    2 slices of wholemeal bread (HEB)
    2 syn-free sausages
    2 Laughing Cow light triangles (part HEA)
    Frylight

    With a rolling pin flatten the 2 slices of bread. Spread with the laughing cow triangles.
    Put a sausage on each slice of bread and roll up, then cut
    into three.
    Put on a tray, that has been sprayed with Frylight (lightly spray sausage roll with Frylight if you wish).
    Bake in medium oven for 10 mins, or until golden.

    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Crumble in the Weetabix, stir in the mincemeat, spices, honey and sweetener. Mix in the beaten egg and stir well. Line a loaf tin with foil and spray with Frylight. Bake for 25-30 minutes in a medium oven (190c).

    28g porridge oats
    5 scan bran
    1 tbsp. dark treacle
    15g powdered sweetener
    2-3 beaten eggs
    1 tsp. cinnamon.

    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Stir in the porridge oats, treacle, cinnamon and sweetener. Mix in the beaten egg and stir well.
    Line a loaf tin with foil and spray with Frylight. Bake for 25-30 minutes in a medium oven (190c).
    OR
    Place
    in a microwavable container (or pack lunch box) and microwave on high for 5 minutes.

    Scan Bran Christmas Pudding (20½ syns in total)
    2 Weetabix (6½ syns)
    8 scan bran (4 syns)
    2 tbsp. Mincemeat (4 syns)
    3 tbsp. Golden syrup (6 syns)
    1-2 eggs, beaten
    1 tsp. Brandy essence
    1 tsp. Ginger
    1 tsp. Cinnamon
    2-3 tsp. Mixed spice
    28g powdered sweetener

    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Crumble in the Weetabix, stir in the mincemeat, syrup, brandy essence, spices and sweetener. Mix in the beaten egg and stir well. To cook: Place in a microwavable pudding bowl microwave on high for 10-12 minutes until firm.

    5 Scan Bran (1 ‘B’ selection)
    28g cocoa powder (4½ syns)
    1 level tbsp. Golden syrup (2 syns)
    15g powdered sweetener
    2 eggs, beaten

    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Stir in the cocoa powder, syrup and sweetener. Mix in the beaten egg and stir well.

    2 level tsp honey (2 syns)
    15g powdered sweetener
    2 eggs, beaten

    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Crumble in the Weetabix, stir in the ginger preserve, ginger, honey and sweetener. Mix in the beaten egg and stir well.
    Line a loaf tin with foil and spray with Frylight. Bake for 25-30 minutes in a medium oven (190c).

    Scan Bran Carrot Cake 1 Healthy ‘B’ Selection and 6 syns
    1 Weetabix and 4 Scan Bran
    5oz grated carrot
    1/2 tsp mixed spice
    1 tsp cinnamon
    1 tsp nutmeg
    2 tbsp mincemeat
    2 tsp runny honey
    3 eggs, beaten

    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Crumble in the Weetabix, stir in the honey, mincemeat, carrots and spices. Mix in the beaten egg and stir well. Line a loaf tin with foil and spray with Frylight. Bake for 25-30 minutes in a medium oven (190c).
    OR
    Place
    in a microwavable container (or pack lunch box) and microwave on high for 5 minutes. To make a tasty topping mix Quark soft cheese, lemon juice and sweetener and spread onto the carrot cool once cool.

    Scan Bran Sticky Toffee Buns 1 Healthy ‘B’ Selection and 4½ syns
    5 scan bran
    1 sachet toffee options
    1 tbspn. syrup
    1 egg

    Soften scan bran with hot water - leave to swell for better results. Mix all ingredients together with beaten egg. Bake in a moderate oven on non-stick bun/muffin trays. Makes either 12 buns in 15 minutes or 6 muffins in 20 minutes.

    Scan Bran Rhubarb Crumble 1 Healthy ‘B’ + 1 syn OR 2 Healthy ‘B’
    5 scan bran
    454g rhubarb stewed with sweetener

    Soften 5 scan bran with hot water and leave to swell. Mix together with Brown 'Gold' sweetener. Sprinkle the scan bran mixture over 454g of rhubarb stewed to taste.

    Chocolate Hazelnut Truffles
    Total 8.5 syns on both days
    5 scan bran (2.5 syns)
    1 1/2 level tablespoons Nutella chocolate spread (6 syns)

    Crumble scan bran into a bowl, add Nutella and mix well. Divide into little bun cases and leave in fridge to set. Should make approx 20 truffles.

    Scan Bran surprise 1 HE'B + 7 syns or 9.5 syns for the whole dish on both days
    5 scan bran (HE'B or 2.5 syns)
    1 Tbsp Nutella hazlenut spread (4 syns)
    1 toffee Mullerlight
    8oz very low fat fromage frais
    1 vanilla Mullerlight
    1 meringue nest (3 syns)

    Crush scan bran and mix with Nutella, leave to set in the base of serving dish. Mix together toffee Mullerlight and fromage frais (this should be sweet enough but you could add additional sweetener if desired).
    Pour over crushed scanbran and Nutella mix. Crumble meringue nest into vanilla Mullerlight and layer over toffee Mullerlight mix.


    SCAN BRAN BACON AND CHEESE SAVOURY
    5 scan bran
    3 beaten eggs
    Lean cooked and diced bacon (as much as you like)
    1 oz extra strong Cheddar cheese, finely grated
    Salt and freshly ground black pepper
    Soften Scan bran in a little hot water
    Add the eggs to the scan bran mixture
    Add remaining ingredients and mix well
    Place in a microwavable dish and cook approximately for 4 minutes
    This dish takes 4 minutes in an 800 watt microwave and will need a little longer in less powerful ones.
    8 ½ syns whole dish on Original or Syn free if using cheese a Healthy Extra ‘A’ and the Scan brans as a Healthy Extra ’B’

    CREAMY CHEESE AND GARLIC STUFFED MUSHROOMS (Serves 1)
    1½ syns on Green /Original choice when using Dairylea Light Triangles as a HEA

    2 large flat mushrooms
    ½ small onion
    1 clove of garlic
    Fry Light
    3 Scan brans
    3 Dairylea Light Triangles
    2 tbsp quark skimmed milk soft cheese
    To serve:
    Salad leaves
    Sprigs of fresh parsley

    1. Heat the oven to 220°C/425°F/Gas 7. Remove the stalks from the mushrooms and finely chop them. Finely chop the onion, crush the garlic then add them all to a saucepan lightly sprayed with Fry Light and soften gently for a few minutes. Then remove the saucepan from the heat.
    2. Finely crush the Scan bran and add to the cooked vegetables in the saucepan, along with the cheese triangles and quark and mix thoroughly.
    3. Spray the mushrooms with Fry Light and divide the mixture between the mushrooms.
    4. Place in the oven and cook for 10 minutes, or until the mushrooms are cooked through.
    To serve: Arrange the salad leaves on a plate, place the mushrooms in the centre and garnish with sprigs of parsley.
    Tips
    When eating them on their own try toppings that are more moist and leave them to soak in for a few minutes before eating as this softens them slightly. Mix chopped tomatoes, basil and chopped ham in a bowl with lots of salt and pepper - leave for a while for the tomatoes to reduce some juice (which they will do due to the salt) and then pile on your scan bran. You can also add diced red onion or HE of olive oil - like bruchetta - yummy!
    Cottage cheese with pineapple is a good topping.
    If you have a few scan bran with a glass of water it really fills you up.
    Breakfast: 2 scan bran (1 syn) broken into pieces and covered with frozen fruits of the forest/ summer fruits. Defrost it in the microwave (or leave to defrost overnight) and the juices from the fruits make the Scan/Oat bran soggy. Top it off with a banana and yogurt.

    Cheese & Onion Scan Bran Burgers (Syns: 7 for all 3 burgers)
    3 Scan Bran
    Hot Water
    2 Eggs
    1 Bunch Spring Onions
    42g Reduced Fat Cheddar
    Soy Sauce
    Seasoning
    Fry Light
    1. Crumble the Scan Bran, add hot water and allow to cool.
    2. Beat the eggs and add a good sprinkling of soy sauce plus the seasoning.
    3. Mix the egg mixture with the Scan Bran.
    4. Finely chop the onions and add to the Scan Bran.
    5. Grate the cheese and add to the Scan Bran.
    6. Allow to stand for 15 minutes.
    7. Shape into thin burgers (makes 3 quite large burgers) and fry in Fry Light until golden on both sides.
    They are best served with Baked Beans or Mushy Peas

    Chocolate fudge cake (Syns: 12 Syns for the whole cake and it’s freezable)
    5 Scan brans broken into small pieces
    1oz sieved icing sugar
    2 level tbsp golden syrup
    4 tbsp Canderel
    2 beaten eggs
    1 tub quark
    1. Soak the Scan bran in a little hot water until soft.
    2. Add the rest of the ingredients and mix well.
    3. Place in a parchment lined loaf tin and bake 190C for 30 – 35 minutes.
    Scan Bran Scotch Eggs (Syns: Free if using Scan Bran as a Healthy Extra)
    Syn “Free” Sausages or sausage meat or Bowyers sausages (½ syn Mediterranean)
    Eggs (Boiled)

    1 Egg (Beaten)
    1 Scan Bran (crushed using a rolling pin!)
    1. Boil the eggs, allow to cool and then remove shells.
    2. Remove skins from sausages if using. Mould sausage meat into rounds and flatten.
    3. Coat each egg in sausage meat until completely covered, dip into beaten egg mix, and then roll into Scan Bran crumbs until coated.
    4. Place on a baking tray and cook at 180° for about 25 minutes.
    5. Serve hot or cold with salad.
    Variations:Add 1 finely chopped onion to the sausage meat.
    Add lean minced bacon to the sausage meat.
    Add 1 level tbsp of tomato ketchup (1 syn) to the sausage meat.
    Add curry powder, herbs or spices to the sausage meat.

    Onion bhajis (Syns: 2½ syns for all the bhajis on Green or Extra Easy)
    1 large potato
    1 large onion
    2 cloves Garlic
    5 Scan Bran (Healthy extra ‘B’)
    3 tblspn curry powder
    1/3 cup hot water
    1 egg
    1 tspn turmeric
    Seasoning
    1. Crumble the Scan Bran until it resembles breadcrumbs.
    2. Add the water and egg and soak for 10 minutes.
    3. Peel and grate the potatoes.
    4. Peel and chop the onions and garlic.
    5. Mix with the Scan Bran.
    6. Add the curry powder, turmeric & seasoning.
    7. Shape into bhajis.
    8. Fry in fry lite until cooked.
    Pizza (Syns: 12 Syns for the whole pizza)
    1. Soak 4 Scan Bran in a little hot chicken stock.
    2. When the stock has soaked in and the Scan Brans are soft, mash.
    3. Form the Scan mash into a pizza shape on a baking tray covered in baking parchment .
    4. Cook in a medium oven until crisp.
    5. Place ½ tin of Napolina chopped tomatoes in thick sauce in a microwave dish along with half an onion finely sliced, a crushed garlic clove and half a tsp of syn free sweetener.
    6. Cook on medium heat until the sauce is thickened.
    7. Finely grate 28g cheddar cheese and mix into at least 3 tbsp Quark.
    8. Add ¼ tsp Colman’s mustard powder and a couple of shakes of Knorr Aromat or Schwartz season all.
    9. Mix well and leave to stand to allow the quark to absorb all of the flavours.
    10. Pile the tomato sauce mixture onto the crisp base and blob cheese mixture over.
    11. Heat in a hot oven until the cheese has browned.
    Oatbran/Scan Bran cake (Syns: 2½ for the whole cake)
    5 Scan/Oat Bran
    1 Mullerlight yogurt
    2 eggs
    1/4 tsp baking powder
    5 tbsp sweetener or to taste
    1 tsp cinnamon
    1. Cover the Scan Bran with boiling water to soften.
    2. Mix all the ingredients together and microwave for approx 7 mins - gorgeous!
    Top ten toppings!
    1. Top each biscuit with 1 laughing cow cheese and 1 teaspoon of lemon curd (½ Syn each)
    2. Mix a tub of quark with stilton from allowance and leave in fridge overnight - the whole tub is then 6 Syns or 1 Healthy Extra
    3. Soften 2 Scan Bran with a spot of boiling water, add milk from your allowance, microwave for 50 seconds and add granulated sweetener - perfect start to the day!!!
      Top with...
    4. Cheddar cheese and bacon
    5. Bacon and banana (don't knock it until you've tried it!)
    6. Bacon and melted stilton
    7. Tuna mixed with very low fat mayo and spring onion
    8. Cottage cheese
    9. Quorn sausage and tomato
    10. Laughing Cow cheese, ham and tomato

    2 muller lite yogs (either lemon/lime, orange or vanilla)..
    1 tub of quark ..
    tinned fruit in juice or fresh fruit of your choice.
    Method
    Whisk the yogs into the quark
    Make up the jelly to half a pint (dissolve in 1/4 pint of boiling water, then add 1/2 pint cold)Whisk jelly into quark mixture, add the fruit and chill until set ..
    Whole dish is 2 syns.
