    I use Adobe Audition and Adobe illustrator; and dreamweaver. I was thinking that each core would run a different program, whatever they are - but have I got this wrong?

    If so should I go for a really good dual core or core 2 duo (I'm not very clear about the difference). One day I might go to Windows 7, I don't know if this is an issue, although I'm generally quite happy to stay with what I'm familiar with and have all my ancient peripherals and software working.

    Don't use Windows 64 bit. It's very poorly supported for drivers and is kind of in limbo. If you want to go 64 bit use Vista or 7.
