Tried your lamb casserole minus the sweet potato and green pepper ('cos I didn't have any) - Lovely!
Did it in the slow cooker using some lamb chump chops which I cut into cubes of sorts. It will become a staple recipe in our house from now on.0 -
am going to do the lamb casserole tomorrow...anyone know what pumpkin tastes like as I am going to try this if I can find a pumpkin I think it's abit early for them yet...:D

Made a casserole based on this recipe today; diced onion, fried with some lazy garlic and diced lamb, add diced sweet potato and chunky cut courgettes; add tin of chunky chopped tomatoes, dried herbs to own taste and a tin of cannellini beans. Couple of tablespoons of water and a good dash of worcestershire sauce instead of a stock cube ... cooked on stove for about 4 minutes but then had to dash out for a swim so put in oven for 1 1/2 hours at 190C, and it was ABSOLUTELY GORGEOUS. Veggies held their shape really well.That's Numberwang!0

1 red onion
1 large sweet potato

3 tablespoons water
2 large sprigs of rosemary.
Cut all the fat off the lamb and cut into cubes. Fry this off gently in a frying pan to brown the meat with the onion and garlic. Add the sweet potato cut into chunks. Then add the flour and blend in and then the other ingredients except the rosemary. Bring to the boil then place into a casserole dish with the 2 springs of rosemary resting on the top and then cover with a lid or piece of foil and cook for around an hour and 15 to an hour and a half on 190c.

I always find lamb fiddly to slice or dice because of the fat, I didnt think to buy chump chops, the ones I've bought in the past havent been as fatty as a joint of lamb, (not that I buy it often, so forgive my ignorance) I'm definitely gonna try this recipe now.
