Okay, this is my favourite but you can adapt the ingredients to taste.
3 red peppers diced
1 small onion
1 clove garlic
2 bay leaves
2 veggie oxo cubes
1 1/2 pints boiling water
400g tin tomatoes
(can't remember how much rice, I just throw it in. Will go and look it up in a bit). True rissotto rice is arborio but I am just as happy with Tesco Italian rice.
It has some spices too, will have to check those as well. When I am in the kitchen making it my hand just picks out what we normally use. Putting it in writing I can't remember what goes in.
You can throw all the ingredients into the Dutch oven and cook it on a low heat for about 90 minutes. You will need to learn how your DO works with different ingredients and your oven and experiment until you get the result you like.
You can also fry off the pepper in the oven on the stove top with the onion and spices first if you want to. The beauty of the Dutch oven is that you can play around with recipes. Like everything there might be some trial and error but you will get there.
You can make a chicken one with chicken instead of peppers and chicken stock. You can add anything you want to that, depending on your own tastes.
I have an aubergine one as well but my family are not too keen on that. When I am digging out the pepper recipe, I will get that one out too and post it.0 -
thanks that would be a great help! i can wait to use it !(just realized how sad ive become, before the kids came along i would at this time on a friday night be getting exited about going out drinking 14 vodkas and eating kebabs)now im buzzing at getting a second hand dutch oven that i dont know how to use! oh dear not to worry think how much those nights out used to cost eh!
