Veggie nights & what to do with tinned tuna?

    I put tinned tuna in Rice salad; peppers. peas. corn, onions, baby potatoes.

    Anything usually made with mince (chilli, bolognese, moussaka, etc.) can usually be made veggie by replacing the meat with different kinds of beans or tinned green lentils. Try different kinds to see which textures you think work best.

    Also veggie curries are easy and healthy. My favourite involves butternut squash, onion, sweet potato, potato, raisins and cooking apple. Add some curry powder (cheating, i know...), cinnamon, grated ginger and a couple of bay leaves, pour over some stock, season and cook til the veggies are soft enough to eat. I tend to end up making tons of this but it freezes quite well, which is always handy.

    And don't forget "end of the week pasta"! Lightly fry all the random veggies that want using up, add some garlic and a bit of pesto and mix with pasta. I wouldn't have thought carrot & courgette pasta would be any good, but it's surprisingly nice. :D
