Veggie nights & what to do with tinned tuna?

What about a tuna nicoise salad? Tinned tuna, new potatoes, french beans, olives, tomatoes if you like them raw plus whatever else you like (traditionally egg, but I can't eat that). Tuna and three bean salad has already been suggested; that's great with a can of mixed beans, some red onion, herbs, dressing etc. Or you could make bruscetta with a similar tuna and three bean topping.0

I'm not sure if the tuna and veggie nights question is different, I am sure it is, maybe OP meant non-meat nights as opposed to veggie
I'm not veggie, and OH would love to eat meat every night but as we only buy free range (organic in most cases) chicken and pork, we don't have it every day. With tinned tuna-I often do a pasta bake with sweetcorn as others have posted, I tend to just stir through some half fat creme fraiche and the zest of a lemon-and LOTS of black pepper (adding cooked broccoli would work too)Not sure if the CF allowed on slimming world though...
Veggie-I love spanish stew (tbh I made it up, but thats what i call it lol) Just fry off onions, peppers mushrooms, then add smoked paprika (sweet or hot, I tend to use a bit of both) tinned tomatoes and chickpeas. I do it in the remoska but can easily do on the hob. Have it with brown rice-yum yum very virtuousCoriander added at the end makes it REALLY scrumptious
Stir fries as have been said above, and noodle soups are delicious too-stir fry some veg-usually use beansprouts pak choi and some chilli, but pretty much anything goes, add veggie or chicken stock (depending on just how veggie you want to be) soy sauce to taste, then at end add coriander and sliced spring onions. ooh am hungry now
Forgot to say-obviously with the noodle soup you need noodles! I tend to just pour boiling water over some egg noodles while I do the prep and stir fry, then stick them at the bottom of the bowl before pouring over the stock and veg0 -

I hate Nicoise salad, apart from tuna & tomato, another combo I thing is wrong is tuna & egg:eek: Don't like olives either:o

They are different nights, I started with 1 veggie night PW, now I've introduced another.
I have 1 fish night, but DD only really likes tinned tuna (& fish fingers & prawns), so I wondered what else I could do with tuna.0 -
Why not have a look at the meal planning threads for inspiration? I have just posted a tuna dish we made last night and there are loads of others' great ideas on there for veggie and fish meals. I see what you mean about the tuna/tomato sauce thing - I do prefer it in a creamy sauce tooLove and compassion to all x0

For your veggie nights do you like veggie mince at all for veggie bolognese, chilli etc? I used to love tuna pasta and my daughter finds its one of her favourite meals and a cheap filling dish too.Every day is a new life to a wise man.

I don't like any of the veggie versions of meat/burgers/sausages/etc.
Think I will have to find a SW friendly version of tuna & pasta (something without tomato - which I love with any other combo).
