    Always get a big tray of mince and add breadcrumbs, herbs, onion, oats, sauces etc, to stetch it out, and then use 1/3 to make meatballs which I cook and freeze, 1/3 to make hamburger patties (I hate the cheap bought kind) which I freeze without cooking, and then the last third I cook and make enchilladas, or lassagne or something and freeze most of that as well. Bout as much as I do ahead for meals. Soup I guess.

    My freezer is put most to use though, for stuff for school lunches etc.
    When I am making a cake or pudding, might as well double recipe and freeze the rest.

    Moussakka? Freezes really well.

    I also make a really yummy lentil loaf that I freeze in slices so that it defrosts quickly (not mince based, but similiar idea to a meat loaf, I guess)

    When it's time to cook the shepherd's pie I lift it out of the freezer, de-bag it into the container and cook it.

    Hi Kadeeae,

    If you line your dish with clingfilm or tin foil it's easier to remove the frozen food from the dish.
