Always get a big tray of mince and add breadcrumbs, herbs, onion, oats, sauces etc, to stetch it out, and then use 1/3 to make meatballs which I cook and freeze, 1/3 to make hamburger patties (I hate the cheap bought kind) which I freeze without cooking, and then the last third I cook and make enchilladas, or lassagne or something and freeze most of that as well. Bout as much as I do ahead for meals. Soup I guess.
My freezer is put most to use though, for stuff for school lunches etc.

I've not done things like cottage pie though, as I don't have an abundance of containers that would go into the freezer and then into the oven. I suuppose I could do the meat bit seperate......doesn't mash go watery when brought out of the freezer?
I've never had watery mash from the freezer, but I tend to mix a fair bit of milk and/or olive oil in my mash.
As for containers for the freezer - I freez my shepherd's pie in the container it will be cooked in; but once it's frozen I lift it out of the container and put it in a freezer bag. This leaves me the container to use to freeze other stuff and also takes up less room in the freezer.
When it's time to cook the shepherd's pie I lift it out of the freezer, de-bag it into the container and cook it.0 -
