Carrot cake made in school

The cake was edible. Though it took longer to cook, esp as I had to keep draining the oil off the top. I gave it to a friend who was visiting, and explained the situation. I also found I did have just enough carrots for another so we had carrot fairy cakes too!0

Does anyone have any other suggestions for the topping? Don't you usually use a cheesey topping for carrot cake? I'm sure I have seen recipes with orange in the topping too.Nevermind the dog, beware of the kids!0 -

I normally just make a butter icing for mine,
2oz butter,
8oz icing sugar,
milk to mix.
I would guess you could add a splash of orange juice (or lemon) to mix instead of the milk, that would add a lovely flavour to it!!!!0 -

Snap, thats what I did. I also topped it with a few chopped walnuts. I used white sugar so its pale but tastes lovely. Its very crumbly though. Great recipe thanks. I love simple recipes like this and yoghurt cake.Nevermind the dog, beware of the kids!0 -
Hello!!! Not sure if it is the same, but this is the recipe i use =
8oz s/r flour,
1/2 tsp ground mixed spice,
5oz soft dark brown sugar,
5 oz carrots, grated,
2 eggs,
1/4 pt corn or sunflower oil,
2 tbsp milk.
180C - 40 mins, oblong tin, just mix all ingredients together, then bake!
Topping -
2oz butter, softened,
8oz icing sugar.

I've never made carrot cake (it's been on my to do list for years!) but I think it usually has a topping of cream cheese flavoured with orange juice, and some grated zest on top of that.0 -
It's been interesting reading this thread. My daughter is in year 9 and has hardly done any cooking. Last year they did a recipe with simple shortcrust pastry in, and the list of ingredients included buying ready-made frozen pastry! So I showed my daughter how to make her own :rolleyes: Apparently they don't have time in the double lesson to make pastry from scratch
We used to! She's starting on food next week, and it's going to be all mince recipes this term, which I suppose is very OS! Mind you, as we are veggie we'll have to adapt hers to using veggie mince.
