Carrot cake made in school

    The cake was edible. Though it took longer to cook, esp as I had to keep draining the oil off the top. I gave it to a friend who was visiting, and explained the situation. I also found I did have just enough carrots for another so we had carrot fairy cakes too!

    Does anyone have any other suggestions for the topping? Don't you usually use a cheesey topping for carrot cake? I'm sure I have seen recipes with orange in the topping too.

    I normally just make a butter icing for mine,

    2oz butter,
    8oz icing sugar,
    milk to mix.

    I would guess you could add a splash of orange juice (or lemon) to mix instead of the milk, that would add a lovely flavour to it!!!!

    Snap, thats what I did. I also topped it with a few chopped walnuts. I used white sugar so its pale but tastes lovely. Its very crumbly though. Great recipe thanks. I love simple recipes like this and yoghurt cake.

  • Why not send the teacher a nice note and compliment him/her on the result and ask for the recipe - as most teachers will tell you a little praise goes a long way :rotfl:

    I've never made carrot cake (it's been on my to do list for years!) but I think it usually has a topping of cream cheese flavoured with orange juice, and some grated zest on top of that.

    It's been interesting reading this thread. My daughter is in year 9 and has hardly done any cooking. Last year they did a recipe with simple shortcrust pastry in, and the list of ingredients included buying ready-made frozen pastry! So I showed my daughter how to make her own :rolleyes: Apparently they don't have time in the double lesson to make pastry from scratch :confused: We used to! She's starting on food next week, and it's going to be all mince recipes this term, which I suppose is very OS! Mind you, as we are veggie we'll have to adapt hers to using veggie mince.

    The one I have made- the topping is cream cheese, butter, icing sugar , vanilla and orange zest is of course optional. I top with chocolate buttons for extra richness :rotfl:
