Granted they have guaranteed you will be spending the money with them but you go in WHS (or wherever), you buy £20 of gift card for £20. You get the Gift Card with a pretty picture on it, normally in a cardboard sleeve and also with an envelope. And it states clearly on it you have 1 or even 2 full years to spend it.

I hate gift cards/vouchers with a passion, if you're giving them as a present then why not give cash which can be spent anywhere? A company has to told their gift vouchers on their balance sheet which effectively costs them money, so it's not unfair that they have an expiry date.
Having said that, I'd suggest to OP to send the expired vouchers to the company head office, where they may well be able to exchange them for new ones.0
