I tried for a long time to make it and couldn't work out where I was going wrong. It was the left over mash.
I always used plenty of milk and butter in my mash, but i never made nice potato bread.
I left out the milk eventualy, and the result was heavenly.
It is now one of my own childrens favourites, and it is always to be found in my freezer.

Pink.... your potato bread looks gorgeous, do you make soda farls too?

I use lots of milk/cream and butter in my mash but still use the leftovers for potato bread. The trick is a stiff dough so if other ingredients have made your mash very soft then just add more flour and it should work out fine. I do make soda bread/farls too. If you want the recipe let me know.

Would rice flour work with this ? they sound really nice ,cheers :)

Hi skiTTish, I've never tried it with rice flour so I don't know if it would work or not. If you do try it would please will you let us know.

 Jeekers, they must just be an Ulster thing. You learn something knew everyday;)

Pretani I'ts not necessarily a Northern Irish recipe, I know it's made in Scotland, although I think it might be known as potato cakes there or tattie scones as jinky says. ;)

I'm afraid I can't really take credit for the recipe as I learned how to make it years ago at a local folk museum which does cookery demonstrations from days gone by. Potato bread and soda bread (with bacon, eggs, tomatoes and mushrooms) is a staple Saturday morning breakfast in our house so it's something I've been making for a long time. The reason why I took the pics is because I'm making a recipe folder because I want to pass favourite recipes that my children love on to them.

Thank you all for your lovely comments :A and if anyone has any problems making it please post in this thread or send me a pm and I'll help if I can.

Pink-winged, had a look at your photo album and must say the chicken+veg broth looked superb. You know by the colour that its going to taste nice:D I noticed you roasted the bones. I've never tried roasting them, it seems to give the broth a nice colour.;)

Saw this thread last night & got very hungry looking at the photos -thanks Pink! By pure concidence there was a guy on a local TV programme tonight ("The Seven Thirty Show" on UTV) doing a demo making soda farls and potato bread. The link is here but tonights show isn't up yet. The shows seem to be available on the web for about 4 weeks after broadcast so plenty of time to have a go at making a proper Ulster fry! (edit: it's about 15 mins into the show)
The baker is well respected - his own website isn't fully working but there are loads of links about him on google. Here's one link.
It looks really easy - I'm going to have a go myself.
I'll try and get back here later to put up his recipe for soda farls. I really love these and my Saturday treat is to turn the soda farls into Irish pizzas with mushrooms & tomatoes etc. :j

You make soda farls with buttermilk and you right 'Wee bargain hunter', they good pizzas, deep pan. I can remember my Granny making soda farls and cooking them over the fire on an old cast iron pan with butter. yummy!

SNAP that's exactly what I was thinking!

I can also confirm pink's recipe/pics work wonderfully. My freezer's fully stocked now, and at almost 80p for 6 around here, I've saved myself a fortune. Yum yum. Must go eat some more!;)

PS Pink, posh Scots call them Potato Scones, never potato cakes!
