Help! I need to use up unwaxed lemons and an aubergine

    I often make lemon drizzle cake so I'd grate the zest off the lemons and then squeeze them and put the lot in the freezer. (I store the zest in foil squares and the juice in little plastic boxes so I can take out the juice and zest of 1 lemon at a time)

    Thanks for all the suggestions! :) I must admit, aubergine and lemon risotto sounds intriguing!

    I would love to make nice breads/puds with the lemons but am trying to watch what I eat (and mostly failing) so that would be putting extra temptation in my path!

    It's a real recipe - i didn't just make it up for this thread ;) It was in the guardian ages ago but i've made it again and again cos it's so delicious

    You just make a basic risotto....

    grill one aubergine until charred, scoop out the flesh and add to the risotto....chop another into small cubes and fry till golden and add that...except i usually do half an aubergine for each of those cos 2 is too many

    Then add the juice of the lemon, some fresh basil and a bit of finely grated cheese.

    If you want i can type up the proper recipe with quantities and things. :)

  • How about lemon curd and moussaka?

    I was using up the same stuff last week and made both of these recipes out of Delia Smiths Cookery Collection (think that's what it's called). Was yummy! I made 3 x the amount of the lemon curd recipe as I wanted to use all 3 lemons. It made 3 x 200ml jars and is scrummy!
