Help! I need to use up unwaxed lemons and an aubergine

Not necessarily in the same meal! :rotfl:
I have 3 unwaxed lemons and a large aubergine to use up. I am all out of ideas so would be extremely grateful for any recipes. I have a decent storecupboard so should be able to make something out of them (I hope).

Queen of puddings (my fav) or lemon meringue pie. Not sure about one aubergine. Aubergine lasagne is nice. Aubergine in place of meat, everything else the same. Maybe you could put some other veg in with the aubergine.Anyone who lives within their means suffers from a lack of imagination:beer:

Chop the lemon into slices and store in freezer for use in G&T, mmmm.:hello:0

Sounds like a salad: fry up the aubergines in slices, use the lemon for dressing (got any plain yoghurt to put with it? or whatever oil and herbs you've got), tin of chickpeas and some rice plus any extra veg to make up the rest of the salad.

Yeah, that was terrible. To fully appreciate aubergine I always slice it thinly, brush with oil and grill them. Lemons? Drink or pudding as others have stated to me.0 -

You could bake the aubergines whole at a very high temp until they are blackened and then scoop out the insides, blend with oil, garlic and lemon juice. Lovely dip.Please do not confuse me with other gratefulsforhelp. x0
