I'd sampel some now and if you thinkts good freeze raw and cook at christmas, if not then cut into steaks and freeze in meal sized portions for use for stir fry etcPeople seem not to see that their opinion of the world is also a confession of character.

I hope you don't mind me recommending this.
I cooked a 2kg piece of beef to this method a couple of weeks ago and it was just perfect. I didn't use the flour as my joint didn't have an outer covering of fat but followed the rest of the method exactly, including a good 40 minutes of resting time.Avoiding plastic, palm oil and Nestlé0 -
