Cheap Lanzarote honeymoon help!

I've not really had holidays abroad so I have no clue how to get good deals. We're getting married on 16th September this year and would like a cheap but nice holiday to Lanzarote afterwards. My parents have given me £1k as a wedding present. We intend to spend as little as possible of this and use the rest for savings. But we still want a nice honeymoon!
Or if anyone has any other ideas for a nice weather beach holiday with somewhere to explore, we'll be interested!
Which websites are good to look on? Is it better to wait for a last minute deal? Or find something and book asap?
We would like self catering so we can eat out a fair bit or cook romantic meals ourselves. We would like to be near a beach, with pool access too. And we want car hire.
What's the best way to get cheap car hire?

There is a Luton and a Gatwick flight with https://www.thomsonfly.co.uk for £237.96 for both on the 20th for 7 nights
then the Don Paco Castilla with https://www.alpharooms.co.uk for £160.92 its in a central postions and its about 2 minutes to the beach and bars
