I will need to get "carb" side dishes for my mums main courses.

    Another thought.......what about couscous to accompany some meals. There are several flavoured brands that are quite aceptable eg mediterranean veg, lemon and herb, and tomato flavour and this takes no more than 5 mins to prepare( can be done whilst microwaving the main dish) and they have the advantage tat they can be made up in small quantities if you were to say use only half the packet

    They are quite expensive & she will only eat a tiny amount, so its a waste. I really want something that a small child sized portion can be heated.
    Also again you have the bulky room they take up in the freezer. I would love store cupboard options but I don't think apart from the pasta & nan bread their are any.

    Morrisons sell a microwave rice cooker. It is wonderful, you can cook a very small amount of rice in it. It is like a small plastic colander in a small plastic bowl with a lid. You wash the rice under cold, running water. Boil the kettle and cover the rice with the boiling water, put it into the microwave for 8 minutes and perfect rice every time. It doesn't absorb all the water so will need draining, but is brilliant. You can also add peas, sweetcorn, etc to the rice before cooking for a vegetable rice dish, so no need for lots of pans.

    For the Mash, what about using instant? The Mr. Mash one is pretty good & as much or as little could be made up as required.

    What about tins of boiled potatoes ?
    They are ready peeled and boiled and just need heated and as they are in tins they would save on freezer space.
    You can get them in tescos/sainsburys etc in small tins.

    What a lovely helpful daughter you are.

    We have a COOK shop where we live; if your Mum really has a tiny appetite have a look at their Children's meals too. Personally, we find their portions quite small but I wanted to mention this option to you since they also tend to come as complete meals.

    We have eaten the Chicken Alexander, Pork Dijon and Chicken Dijon meals, but with rice and not mash. I really couldn't imagine eating the Chicken Alexander in particular with mash; pasta at a push or rice would be my recommendation.

    Fresh bread could also be an option for some of the dishes, meatballs for example. I sometimes do meatball sandwiches (subs) with salad and cheese when my girls have friends over (boys esp) and they've been playing sport or something.

    Great to have a bit of info from someone who knows.

    I did wonder about the chidrens meals:D
    She does have a tiny apetite.

    I guess the only way not to waste it is to have the same thing 2 days running?

    Thanks fir the ideas but she is picky & would never go for instant mash or tinned pots.

    Not sure about what area of the country your mother is in, but the carers that pop into my grandmother are only allowed to heat up pre-packed meals etc Wiltshire, Tesco ready meals etc and nothing that my mum has lovingly prepared and put in the freezer. :rolleyes:

    They were delivered yesterday, she tried her first today.
    She loved it!!!!!!!
    She ate it all!!!!!
    This is amazing!

    I got aunt bessies frozen mash & I got rice & pasta(!!!) in those vacume bags.

    I think I might try something from their range.
    The puddings are susposed to be lovely.
