Cheese and eggs

I happened to remember that when I was younger and newly married I served my family eggs one night and cheese one night every week to save money. I know that eggs aren't that cheap these days, but they are a cheaper that some meats. Does anyone have any good cheap, really cheap recipes for eggs or cheese?

    quiche is a fav of mine u can use bits and bobs up in it...scrambled eggs...omelette ...frittata...spanish omelette (same i think)...cheese on toast...pizza on a simple base such as pitta bread...french toast and beans .....

    Macaroni cheese and if you use half stock and herbs in the sauce you can get away with less cheese. Omelettes and quiches are very good because you can fill it out with left over meat and vegetables.

    Cheese souffle, eggs benedict, egg curry, kedgeree without fish. Tartiflettes are yummy too.

    I was eating at friend's and she simply halves hardboiled eggs into a cheesy sauce and serves on savoury/vegetable rice. It was delicious!

    Chips and egg is good too!

    If you can make shortcrust pastry, then quiches can be really cheap. I make cheese and onion quiches (individual ones because I have the baking tins) quite regularly. If you can't, or don't want to, make pastry, then you can make a crustless quiche.

    Macaroni cheese is another possibility - but not one made with a traditional cheese sauce. I make my mum's own macaroni cheese. Cook the macaroni (enough for however many people you are serving), drain it well and then put it back in the pan on a very low heat. Add some tinned, chopped tomatoes (again, you have to just add enough - proabably a full tin to serve four). Then add enough cheese to make it cheesy enough. Season well and make sure everything is stirred together, the cheese is melted, and the tomatoes are hot. Serve with wholemeal bread/rolls and/or a simple salad. Even people who hate "proper" macaroni cheese seem to like this version. I will mention that the pan it's been cooked in is a pig to wash up and the dishwasher won't do it. I tend to make this when I have one of those small plastic scouring cloths at the end of its life so its last job is cleaning the pan :)

    When I was a kid my Mum used to make cheese and sweetcorn soup. It's just a normal cheese sauce, but with more milk added to thin it a bit. Then chuck in a drained tin of sweetcorn and some chopped up boiled potatotes. So yummy!

    Cheese and sweetcorn fritters are good too- just a thick pancake batter with grated cheese and corn added. Courgette fritters are also lovely- grate the courgette then add to the batter.
