  • You could stick a couple of bacon streaks over it, cover the top with a bit of foil and stick an orange inside, that you have cut a few times.

    I second the Lemon with a bit of tarragon. For me, it's not good with a roast meal, but is great with wedges & salad.

    Or you could just go the whole hog and stuf it. Chicken with stuffing has to be one of my all time faves as the gravy is fab, the potatoes are wicked and I just lurve chicken with stuffing.

    I mix loads of crushed garlic and any herbs that take my fancy into about 4 oz soft butter, then stuff this just beneath loosened skin. I sort of massage it under the breast skin as far as I can get it. Not a healthy alternative, but really nice.
  • Can anyone remember (because I can vaguely but now can't find) a recipe for roast chook that someone posted who had got it from a Russian friend or neighbour. It was like beercan chicken but also - I think - involved spreading mayonnaise over the chicken - or something like that. I sounded so odd that I just passed by, but it's stuck in my memory (slightly) and I'm sorry I didn't try it, and would do it now if I could find the recipe :confused:

    Oh and: one way to get a really moist chook is to let it stand for at least 15 mins when you get it out of the oven - covered with a bit of foil, or a warm upended saucepan, in a warm place. The juices all soak back into the flesh, and make it all delish.
  • Hiya folks

    Last week, I cheated and bought a flavoured hot chicken from the hot chicken counter from Asda for Mr CG as I had forgooten to buy meat for his lunch! The shame of being such a bad gf!!!!

    As a vegetarian, I am quite rubbish at cooking meat and was wondering if there were any easy peasy ways to add a bit of flavour to a chicken - preferably without touching it... but I know that isn't always possible!!!

    Ideas and quantities of ingedients would be much appreciated from you lovely lot!

  • Are you cooking a full chicken or fillets?
    I make chicken fillet parcels - in foil with a oxo cube crumbled over and a few herbs, with choppped peppers ( or any veg ) a dash of lemon juice on a baking tray.

    I do chicken wrapped in foil too, marinaded in honey and soy sauce with crushed garlic. You could put the tiniest wee bit of fresh ginger in there too if your bf likes it. Pour a wee bit of the marinade in with the chicken then cook for about 35 mins on 180 degrees.
    Pushing the pennies around to try and make pounds...

    If you want to add some flavour to the chicken, you could always apply a marinade with a pastry brush so you don't have to touch the chicken. I use one with silicone bristles as they're more durable and hygenic. A paste of olive oil, garlic, salt & pepper and a squeeze of lemon juice is a nice start. Or curry paste thinned down with a little oil/water. HTH!

  • I use chicken seasoning and sprinkle it over. Or try Honey and Mustard, Chinese BBQ Sauce or All purpose seasoning is nice too

  • can't go wrong with nigella's roast chicken recipe from How To Eat. Start with a Free Range chicken. Smear with a little olive oil and salt. Stuff half a lemon up it. Cook upside down to make it nice and juicy (turn right way up 20 mins before end to brown).
