how to roast a whole chicken?

    I use a slowcooker for about 5 hours - it won't do crispy skin but it's by far the most moist I've been able to get the chicken and it's far easier to carve afterwards (well, to make it fall apart is closer to the truth).

    Makes it easier to pick apart afterwards as well, to use the leftover meat for other meals.

    Ah yes, this is true. Last time I did this, the whole chicken was in billions of pieces! It was nice, though :)

    i always roast my chicken upside down, its really helps to moisten it!

    if you have a really large roasting dish with a grill shelf in it, all the better. poor some chicken stock in the dish and put in some large chopped veg, and a few pieces of garlic. place chickn upside down on the grill shelf so thats its not in the liquid and cover with foil. make sure the foils really tightly sealed so the steam cant escape and you get a lovely moist chicken. turn it over the right way for the last half hour and take off the foil to brown the top. yummers, im hungry just thinking about it!

    Beer butt chicken is the best way to cook a chook in my honest opinion :D

    My Dad was in the states a couple of years ago and brought this recipe home. It's now our favourite way to keep a chicken moist while cooking.

    put a lemon or an onion inside while roasting as it keeps the chicken moist....bacon on top is lovely too...a bit of oil on the top makes the skin crisp..enjoy

    Covering the chicken in foil while you cook it will keep it soft. Also don't overcook chicken! People tend to cook chicken until it gets tough and chewy through fear of not cooking it enough, however it is OK to have chicken juicy and moist so long as it isn't pink!
