Hello, this is a very old thread but as it came up in a top search for kebab recipe i figured I'd share.
500g lamb mince, not lean though it will work.
1tsp flour
1tsp cayenne pepper
1tsp oregano
1tsp garlic powder (granules will work too)
1tsp onion powder (granules will work too)
1tsp mixed Italian herbs
Mix all the flour and herbs together and then add to mince (don't do it the other way around or the herbs stick to the bottom of the mixing bowl)
Mix it well with hands, squish and squeeze it into a dense loaf shape.
Put in oven for 1 HR 20 minutes on gas 4 (180?) Turning once halfway
Alternatively I'm told it works in a slow cooker 4hrs on high or 6 hrs on low but i don't like the idea of that much meat being cooked that slow.
Slice thin, the denser you packed it the easier this will be, vegetable peeler will make good slices, or just chop it up whatever it's kebab lol.
Serve in a warmed pitta or my favourite, a warmed wholewheat wrap with salad and mayo.
Feel free to reduce spices down by 50% if you want it less zingy.

On the bbc eat well for less program there was a family who were given a recipe to replace their weekly donner kebab takeaway - it went down well, maybe you can Google it.Dogs return to eat their vomit, just as fools repeat their foolishness. You could try Vietnam kebabs instead. They are made with meat pigs0
