What can i/do i do with these lentils ?

Hi slowandsteady,
I never soak either red or green lentils before using to bulk out soup, stews, casseroles or sauces. Just throw them into whatever you're cooking. The green lentils being bulkier, take longer to cook than the red lentils and don't disintegrate in the same way.

Hiya - I have just recently started cooking with red lentils too (being as they are SO cheap). The first thing I made was a lentil curry from www treehugger com / files / 2006 / 03 / post_26.php
I substituted butternut squash for the sweet potato (no weight watchers points!) and it was really yummy. Next time I'm going to add green beans as well.

A nice dish you can cook with the green lentils (puy) is this - sorry don't know the name of it:
Fry some chopped onion, garlic and bacon, add the lentils and some stock, then simmer for about 30 mins or until the lentils are soft and most of the stock has been absorbed.
Add salt and pepper to your taste, you can also add thyme or any other herbs or seasoning you fancy.
This is lovely served with some crusty bread/baguette.0
