Vegetarian Barbeque Ideas

I have a friend who is vegetarian, and thinking about inviting him to a BBQ. I want to serve everyone veggie food - although boyfriend is not so keen on that - and wondered if anyone had any ideas or recipes?
At the moment I have thought of sweetcorn on the cob - does this need to be preboiled? - and Halloumi cheese (I have only ever fried this before, but I understand that you can kebab it.)

veggie kebabs - tomatoes, par boiled sweet potato, peppers
halloumi is delicious. slice thinly, & simply grill. Try to be careful so it doesn't fall through the bars of the grill :mad:
You do need to par boil the corn.
don't forget lots of salads, not just lettuce, how about tomatos, avocado & mozarella, olives, cous cous
do they eat fish? fish is fantastc cooked on a bbq, wrapped in foil
I too would want some meat..how about the veggie stuff on a big bbq, & a disposable one for meats?0 -
He does eat fish, but only really to be polite... the disposable BBQ is a good idea.0

I'd definitely suggest two separate grills, one disposable; as long as my stuff isn't cooked on any bit that has been touched by meat - I don't care what you eat.

Some other thoughts:
* microwave some jacket potatoes for 10-odd minutes, and then wrap in foil, add butter/oil, and put on the barbie until crispy (20 mins or so). Add a filling if you need to - baked bean / vegetable chilli (buy it in a tin) / cheese and beans etc etc.
* garlic bread - buy it in a packet, wrap in foil and cook on barbie - lovely.
* sweet potato is lovely, but can disintegrate if you over-boil it before kebab-ing - 5 minutes at most. I've had great results with kebabs of sliced peppers, mushrooms, courgette, and whole cherry tomatoes. Buy a (veggie) BBQ marinade from the supermaket and coat the chopped vegetables for at least an hour before-hand if possible. If you use wooden kebab sticks (metal is much better), soak them in water for an hour beforehand.
* Potato salad - can't go wrong. Boiled, cold, new pots (which are right in season now) and chives/spring onion, plus mayo and lemon juice.
* Halloumi - yum - get enough so the non-veggies can eat too, otherwise it disappears and I feel short changed :-)
* You can get vegetarian burgers and sausages from most supermarkets/health food shops - check if they would fancy them in a bun with all the usual trimmings (I personally think they are the best, but the really militant veggies would not).
* From personal experience, corn on the cob is very difficult to barbie - it was just raw when I tried. So make sure you boil it until it's cooked and then barbie at the last minute; but I am probably just a rubbish cook :cool:.

Some fab ideas already
Large mushrooms are really nice if you barbecue them and then add some cheese into the centre right at the end....I love goats cheese or mozarella.
And I can really recommend barbecuing pineapple if you all have room for puddingSometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...0 -

you could grill tofu, jacket poatoes, new potatoes in salad (onions, capsicums), cauliflower and brocolli marinated then grilled, pineapple skewers, samosas you can buy them frozen, stuffed peppers, aubergines marinated and grilled. Frozen chocolate mousse, really cheap make it urself 20 mins i can get the recipe to u on the wkend if u want it

As a note- - completely agree that tofu is great on a kebab, but for any tofu virgins out there:
* make sure you buy firm or extra firm tofu for a BBQ - not silken!
* you can use it as is, but ideally drain it two hours beforehand, press between two towels with a heavy weight for an hours, and then slice and marinate in BBQ sauce / soy marinade for an hour0 -
I ALWAYS bbq corn on the cob, its my favourite thing if I am having a bbq, and I'm not veggie. I never parboil it, I do it in its husks(if can get them with it on, growing my own again this year
) or wrap in foil. If in husk soak for 10-15mins, if in foil add a spoonful of water, and wrap tightly. BBQ for 5mins a side, turning 4 times. It is delicious and SO much tastier than plain boiled. No butter needed!
