Healthy get well soon cake?

A friend of mine has just been taken to hospital with a blood clot to his lung. I want to make him a get well soon cake when he's up to eating such things, but I want to make it with a clear conscience health-wise! Do you know of any recipes that would be suitable (e.g. low in saturated fat etc.)?

    I've got a recipe for a very quick carrot cake - which uses sunflower oil (and it's very yummy too!)

    8oz self raising flour
    1/2 tsp mixed spice (or cinnamon, nutmeg etc)
    5oz brown sugar
    5oz grated carrot
    2 eggs
    1/4 pint sunflower oil
    2 tbsp milk

    combine all ingredients and bake at 180 C for 40 mins

    for icing : 2oz marg, 8oz icing sugar and little milk to mix
    weaving through the chaos...

    That's a great recipe - I've got a feeling that carrot cake may be one of the ones he doesn't like, unfortunately! I'll certainly file that recipe away for future reference, though.

  • I've tried and tested lots of low fat/no fat cake recipes (I love baking but I'm also trying to lose weight!) and have yet to find one that's as tasty as normal cake. Maybe go for a fruit cake or just a nice light sponge?

    How about an orange (or lemon!) fruit tea loaf - there is no fat in that at all and it could be made more healthy with the addition of some nuts

    never tried this, but I read somewhere that you can substitute the fat in cakes with puree apple / apple sauce (I think it mentioned heat apple in pan with water to HM it), I never have apples long enough to give it a go

    This is very common in american lowfat/'healthy' baking recipes. I tried it once with some oatmeal cookies and it worked quite well. Not sure how it would fare in a cake recipe, but could be worth a shot.

    I did post a recipe for a fat-free banana loaf which is delish like a bread pudding and keeps for ages. I dont know how to get it up....it was about 3 yrs ago.

    Well he's had a pulmonary embolism - I imagine he's going to be advised to maintain a healthy, low fat diet with lowered alcohol consumption too. I don't want to give him a cake that he shouldn't eat!

    This is the recipe i use. Is it the same one as you are talking about penny pincher.

    1) 165 grams sugar
    2)150 grams self raising flour
    3)1 Egg
    4)2 very ripe bananas

    Mix all ingridients together
    Sppon into a greased loaf tin
    Place in the middle of a preheated oven gas mark 4 for 30-45 minutes. Until middle is cooked
    Leave to cool on a wire tray

    My family and friends love this recipe
