does any one know how they cook the chicken before it hits the grill - weather in london is ment to be roasting this weekend so really want to fire up the BBQ!0

The recipes are here http://www.nandos.co.uk/recipes. It looks like they marinade the chicken overnight, then remove the chicken from the marinade and put it under a medium grill, turning frequently, until the juices run clear. HTH.:)Felines are my favourite

I tried making nandos style drum sticks before and it was very similar:)
To get the super juicy texture in the chicken, I used the Heston Blumental's roast chicken recipe from How to Cook Like Heston tv series.
The key is to brine the chicken, soak the chicken in salty water 60g salt per litre I think? for anything up to 24 hours.
He then stuffs a whole lemon and some thyme inside the carcass and bastes it in butter then cook at 90 degrees in the oven...

Once it's cooked and rested, I brushed on Nandos peri peri sauce and some tasbasco or insanity sauce and grilled it on high, basting and turning it constantly.0 -
We have nando's chicken all the time (big Nando's fans in this house!) We always use the Hot marinade, because by the time you have cooked it, it is more like the medium one you get in the restaurants. We do it a couple of ways, sometimes we cut the chicken into big chunks and marinade overnight then just bung it in the oven (yummy!) or we marinade whole chicken breasts (again overnight) and put them on the george foreman (takes about 10-15 min)
Really yummy with chips and garlic bread. (ive never been able to make my own version of their macho peas though!)the only debt left now is on credit cards! The evil loan has gone!! :j:j0 -

can anyone tell me , to make super juicy chicken (like Heston's), would this work with chicken fillets or only on a whole chicken?

I love Nandos chicken. Unfortunately it's a very rare that I get to eat it as we don't have one in my town : (.
Has anyone tried or know how to make chicken as close to Nandos as possible. Hmmm it would be delicious with chips and a salad. Our Tesco has a few Nandos sauces which one is best to use and how do I do it?
