                    I buy fresh garlic and keep it in my larder BUT it quickly goes soft and loses its strength.
What do you do with yours to keep fresh??
Also I find it tedious peeling and slicing - What is a quick way of dealing with it for a stir fry etc.???

            You can buy garlic paste in jars in the asian supermarket. I usually get the Garlic/Ginger paste which is nice. Last for ages.0

            In Tesco you can buy huge jars of peeled whole garlic preserved in vinegar (don't worry, you don't taste the vinegar in recipes), it lasts for ages.  Use more of it in your meals then. It's good for you!
 I just separate the cloves and smash the whole clove with the flat part of the knife blade. The papery skin comes away easily then, but you can just chuck it all in anyway, the papery skin seems to disappear during cooking.0

            morrisons do a bag of chopped garlic for 50p frozen. Great value and you just use it as you would fresh from frozen. Its about 4 or 5 bulbs worth in a bag. Dont shop there but mother in law always gets us some as it much easier than keeping the fresh one0

            I have one of those crock garlic pots with the holes in it. Best thing I have bought in ages and really keeps the garlic well.
 I like to smash it with a large wide knife. Took a while to get the courage to smash my hand down on a knife like a Chef, but I do it all the time now.
 I also like paste, lazy chopped garlic and frozen green garlic. (green garlic has a great taste fresh or frozen. It just tastes so different to normal garlic)I want to be credit card and loan free by Christmas 20100

            Garlic Puree, its the future! Comes in a tube for 50p, lasts for ages. Get it in Tesco, Morrisons, Asda, etc, usually near the tomato puree.Debt free since July 2013! Woo hoo! The bank actually laughed when I said I have come in to cancel my overdraft.0

            I put my garlic in the microwave oven for about 25/30 seconds and than very quickly put washing gloves on and peel it off very quickly. If you got few cloves do the same than put all in the food processor add olive oil and puree, put it in a jam jar, top it with more oil and keep it in the fridge.0

            Can I just add a word of caution - garlic stored in oil carries a risk of Botulism, so if you want to preserve it for any length of time, I would check recommended ways of storage.0
