    As a rough guide, I'd weigh something I wasn't sure about and think 4oz/120g per serving/person. I always think of meat in terms of burgers, so mentally view it as: "a 4oz burger is enough".

    Apart from that, I'd base a serving on size on the plate, how many items there are and how many people.

    If buying from a butcher or fishmonger I always ask the best way to cook and serve and have found them to be really knowledgeable-they want you to enjoy what you buy so you go back for more!

    It's square slices of sausage meat. Think square shaped burgers made of sausage neat and you are on the right track.

    I believe it's a Scottish thing, but very popular in Geordie Land. Not so popular in Dorset :mad:
