I have clematis on south, north and west facing fences, all are growing well but they do need to be planted quite deeply. You can either cover the bottom of the plant with stones or plant a good ground cover plant around them. I have a large day lily at the base of mine, it keeps the roots shaded and cool.

I'd go all edible, crammed in cottage garden style. Use all the various height and root layers effectively to squeeze more plants in.

If you do get some dwarf fruit trees, go for a family tree. The different varieties will take care of pollination and will give you a bit of variety as well as spread the fruiting season.
