for me and my gf:
mon - beef kebabs, potatos and veg
tues - burgers, chips and veg
wed - Turkey curry from last (cooking 8 servings today) week - defrosted
thu - takeaway, reason: last exam in 3rd year of unithat or a good aldi pizza - better than yukey pizza express - to bung in the oven and eat with salad
fri - sauasge casserole (plus enough leftover for sat)
sat - more sausage casserole
sun - Curry pie (enough for monday too)0 -
We work our plans Thursday eve - Thursday eve, so as from yesterday...
Dinners
Thu Spaghetti Bolognese with salad
Fri Smoked Mackerel and Tomato Kedgeree with salad and chutneys/pickles
Sat Mediterranean Beans with salad and garlic baguette
Sun Meatloaf, vegetables and potatoes, followed by bought lemon tart
(Tea) Beetroot Sandwiches and crisps, followed by flapjack
Mon Pitta Pizzas, Coleslaw and Potatoes
Tue Kidney Bean and Sweetcorn Couscous
Wed Rosemary and Mushroom Lasagne with salad
Puds can be fruit, yoghurt, cheese and celery, semolina, rice pud or vanilla/choc pud.
Mid-Week Lunches
Mon Smoked Mackerel and Mushrooms on Toast, apple
Tue Mature Cheddar Sandwiches, apple
Wed Red Devil Pate Sandwiches, apple
Thu Cottage Cheese, Red Pepper and Mixed Seed Sandwiches, apple
Breakfasts are Grapefruit with Cottage Cheese and Maple Syrup for me, Branflakes with Sultanas or (or in my case "and") Toast with HM Peanut Butter/HM Marmalade/HM Jam/Marmite followed by a banana.
Snacks can be fruit, carrot, celery, crackers, flapjack or HM choc fudge. Drinks are tea/coffee, milk or water.Love and compassion to all x0 -

Hello everyone, not mealplanned in a while... probably why I've been living off chips and junk! Haha. My week starts on a Sunday, so here we go!
Sun 31st May - Roast beef and yorkshire puddings, and veg
Mon 1st Jun - Sweet red pepper quorn chicken and vegetable stir fry
Tue 2nd Jun - HM chilli con carne and rice
Wed 3rd Jun - HM bologneise baked potato
Thu 4th Jun - Southern Comfort chicken (HM, but frozen), potatoes and carrots
Fri 5th Jun - quorn chicken & vegetables stir fry (sweet red pepper if I have enough sauce left)
Sat 6th Jun - Piquant steak & chips
Not long after this meal plan ends, I'll be back at my parents... scary! I'm going to be taking up a lot of the cooking responsibilities when I get home. I can't wait... cooking for one gets very boring!0 -

Moving house on Monday. No packing done, freezer not run down because it was going to be replaced and then it wasn't ... Not buying any food other than lunch meat and milk.

I'm finding it hard to get back into the groove after having been away for work. Have just been to the shops today with a basic mealplan as follows:
Thur - spinach, carrots and tortellini 'in brodo'; HM garlic bread
Sun - chickpea and roasted vegetable bake
These sound really tasty! What does 'in brodo' meanAny chance of a quick idea of how you make them?

Any chance of a quick idea of how you make them?
Hi Justamum - tortellini 'in brodo' means that the tortellinis are swimming in stock, so it is more like a soup than a solid pasta dish. It is one of my recurring quick meals when we have been to town shopping and back too late to do anything more substantial.
Basically I take a pack of HM stock from the freezer, quickly defrost in the MW and bring to the boil (in the pressure cooker this is an even faster meal). I pop in a few handfuls of tortellinis, and maybe some grated carrot if I have carrots or some other vegetable kicking around. Cook till the tortellinis are done. This time I also had a bag of spinach that needed finishing, so I melted in some shredded spinach at the end, until just wilted. Serve with a grinding of parmesan cheese and crusty bread.
As for the chickpeas and roasted veg, this is also very simple: I take several veggies that roast well, such as courgette, peppers, mushrooms, shallots, garlic and roast them (in the Remoska). Once they are about done, I add cooked chick peas and diced fresh (or tinned) tomatoes, shuffle it all around, top with parmesan and put the Remoska lid back on to cook until the cheese is golden and all is bubbling nicely."Remember that many of the things you have now you could once only dream of" - Epicurus0 -
