I hope this is the right place to post this!
My husband & I adore Innocent Veg Pots - especially the thai coconut curry one. However, they are so costly & rarely on offer (oddly, they are at Ocado now, but Ocado has no delivery to our postcode :rolleyes:).
I'd like to attempt cooking a healthy thai curry at home. We are students, and while we both love to cook, we haven't had the time to master new recipes. I'm ashamed to say that I've never made a thai curry myself, only enjoyed the fruits of others' labors! :embarasse
Would anyone recommend a recipe (preferably one that can be altered for a vegetarian)?
Also, as we are living in our current flat only for a year, we opted to do without certain gadgets instead of moving/buying them... namely, we are without a mixer/processor. Is it possible to make a thai curry without one? If not... I don't mind purchasing a jarred sauce & adding things to it - but I'm so ignorant, I don't even know which brand or type of sauce to buy! It would be sad to do all the preparation & then have it taste rubbish because of incorrect/inferior sauce.

Do you have any Asian shops around your area?
I live in Southampton and there are loads, for around £1.10 I can get a jar of red/green curry paste - Only use a couple table spoons each time, so lasts longer!. - curry pastes last longer than "jars" - the ones in asian shops last forever, I've a jar of red, been open for a year in my fridge tis still fine... The one from asda/tesco etc.says on the jar that it lasts around a month in the fridge when open.
Add a couple table spoons to a pan, fry for a few mins, add tin coconut milk (around 49p in the asian shops), add 500g meat, veg etc. serves 4, add rice yummy!
If not you may be able to get some paste in Asda/Tescos etc. but will be much more pricey! If you have an asian shop, look into them, especially the bigger ones!0 -

This is not a curry, but Thai food is my favourite and I just love thai stir fries...
Here's a link to Ken Hom's Thai Chicken with Basil and Chillies which is amazing, you could substitute the chicken with tofu which still tastes nice as the flavours in the other ingredients are very strong.
I love the sauce with this recipe and multiply the fish sauce, soy sauce and sugar by 3 or 4 times as OH loves the sauce too and we argue over who's got the most sauce :rotfl:

As has been said, thai curry paste from oriental/chinese shop - you only use a couple of spoons as opposed to a WHOLE jar of the stuff from Asda (and it still tastes bland!). I'm sure you could make your own paste from scratch but the paste from an asian shop is just as good
Fry off your veggies/meat/whatever. Stir in a tablespoon or so of paste (not too much, you can always add more if its not spicy enough) and leave to cook gently with a lid on til the veggies are soft. Add a can of coconut milk (again, best from chinese shop.. it does seperate in the can, don't worry, just stir it all in) and simmer til it's a consistency you like. At the end I always add some lime juice - either from a lime or out of a bottle (like jif lemon!). It does make a big difference to the taste.
I find 1 can of coconut milk = 2 decent portions. (I will say, it's healthy and good for you, but coconut milk is not low fat!).
I'm veggie and usually do an assortment of veggies (red onion, celery, courgette, green beans, broccoli, peppers... whatever's in the fridge!), and either quorn 'chicken' or chickpeas.
Just a note of caution - most thai pastes contain fish sauce, so do check the labels carefully if this is a problem.
Very very easy and cooks in less than half an hour!0 -

I watched Take On the Takeaway the other week and the French chef on there did a Thai and it looked easy and lovely.

On the programme they said that you can get low fat coconut milk.
Asda do a coconut milk at 57p/400ml can, whereas the Blue Dragon one is £1.10.
