I have tried to make some at home but its not like the ones you get in the supermarkets. Mine normally tastes very sesame or very grainy. Any ideas part of my food doctor diet.Nice to save.0

Just whatever you do don't use the recipe I did from an old Delia book that was almost pure tahini! Eeuuch. I like the grainy stuff. Canyou not blend it a bit more?0

I've tried blending it a bit more but it still comes out very grainy and tastes not quite right? I have also tried so many receipes and I really want to have another go and mastering this one!Nice to save.0

Hi, home worker! I'm intrigued that you want to make something that tastes just like the supermarket. Mine tastes much better, IMHO
The recipe I use is similar to this one (though I use dried peas and soak and cook them myself). I add lots of lemon and garlic, and then whole olives - yummy! I make a big batch and freeze portions.

You could try simmering the chick peas till they're softer? Go light on the tahini and add a generous glug of olive oil.May all your dots fall silently to the ground.0

I also make in batches and freeze and have substituted peanut butter for tahini - one teaspoon for each 15 oz of chickpeas. I also add more garlic than recipes usually indicate. I found it quite hard to blend in a normal blender but got better results when adding some of the cooking water from preparing the chick peas. I agree that it's a mistake to expect it to taste how the supermarket one tastes and I find my own is delicious now I am used to it. And if you use dried chickpeas as a base the cost is about a fifth of shop bought.

after trying various recipes I've found this AWT one to be the best from the GL Diet book. I do mine in a magimix as the blender doesn't seem to give the same consistency.
410g can of chickpeas, drained but water reserved
2 tbsp tahini
2 cloves of garlic, peeled and crushed
3 tbsp lemon juice
1tbsp olive oil
paprika to taste (optional)
(you can also add sunflower seeds, pine nuts and roasted red peppers but the above is the basic)
1 put the chick peas, 3 tbsp of the water from the can, the tahini and the garlic in the food processor and blend until fairly smooth
2 add lemon followed by the oil and the paprika to taste
3 add extra items if required
you really do need the water from the can or it just gets very sticky but I often put in less tahini - you can play around with it till you get the taste you want.
traditional houmous isn't the same consistency as supermarket ones it's smoother (Yarden do a more traditional one that's available in a lot of supermarkets) but if you want it less smooth then just blend it for less time.0 -
