I saw a recipe I mean to try which was for polenta with sweetcorn peppers and chillies mixed in. It makes a sort of spicy bread to serve with a tomato sauce. Can't vouch for it because I haven't tried it yet but it looked tastyIt doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!0

Evening all.
After some ideas to use up a bag of frozen sweetcorn my OH and DS have decided they no longer like it and DD will only eat it covered in butter. so it is down to me to consume a big bag of it. now short of always having a portion with every meal what could i do. i made ham and veg fried rice last night. i know i could put it with some pasta but as its only for one person it would take forever to Finnish the bag.

Just a thought - could you cook some whizz it in a blender or food processer ifyou have one, then add it to something you are making for the family like curry or bolognaise or chilli - where it will add bulk but the other strong flavours will disguise the taste.
Maybe the family just dont like the idea of eating sweetcorn as it is - but would probably happily eat it disguised in another meal.
